For the “Swicy” Tamarind Glaze:
* 1/4 cup tamarind paste (or concentrate)
* 2 tbsp brown sugar
* 1 tbsp lime juice

* 1/4 tsp salt
* 1 tbsp water (or more, if needed for consistency)

* Finely chopped red onion

Instructions
* Prep the Mushroom “Meat”: In a bowl, mix the finely chopped mushrooms with the soy sauce, smoked paprika, garlic powder, and black pepper.
* Make the Glaze: In a small saucepan, whisk together all the glaze ingredients (tamarind paste, brown sugar, lime juice, Sriracha, salt, and water). Bring to a gentle simmer over medium-low heat, stirring until the sugar dissolves and the glaze thickens slightly (about 2-3 minutes). Remove from heat and set aside.
* Smash & Crisp the Tacos:
* Heat a large cast-iron skillet or non-stick pan over medium-high heat. Add a little oil.
