I have jicama, tomatillos, Anaheim chiles, and lime. Got some Anaheim chiles, so I’m making green chili today. I’m thinking about using the jicama in a salad but now I’m not sure. Anaheim chiles are a mildly spicy pepper that’s in season during the summer.
They’re perfect for making green chili. I’m not good with the heat, and before I knew it, summer was almost over. Add salt and pepper to bite-sized pieces of pork, mix, and set aside. Roughly chop the onion and thinly slice the garlic. Peel and wash the tomatillos. Tomatillos, a close relative of ground cherries,
are an essential ingredient in Mexican cuisine. Along with today’s star ingredient, Anaheim chilies,
I’ve recently figured out how to use them. Green chili is a dish where pork is simmered in green salsa.
It’s like the green version of red chili con carne. It’s the same chili, but it has a lighter taste,
which makes it just as delicious. Bake in the oven or toaster oven.
*You can also add jalapeños for spicy. Add oil to a pot and sear the pork. Mexican food is very common in LA,
and my family and I love so much. Gradually, we’ve been expanding our cooking options
and started enjoying them at home. Green chiles are one of them. Add the onions and sauté. If they start to brown, add a little water and simmer. Return the grilled pork to the pot, add the cumin, oregano, and chicken broth. Bring to a boil, then reduce the heat and simmer. This is jicama, a vegetable native to Mexico.
Since it can be eaten raw, I usually add it to salads. The mild flavor and crisp, crunchy texture make it easy to eat,
and it’s low in calories. Its healthiness is also what makes this vegetable popular. Peel the apple and cut it into thin strips. Recently, I’ve finally started feeling comfortable
using Mexican vegetables the way I want. love how unfamiliar ingredients slowly turn into familiar flavors. Squeeze the lime, add olive oil and salt, and mix. For now, put it in the fridge.
Finish preparing it just before eating. I’m making salsa verde (green salsa).
But today, I’m just turning it into a paste. When making it in Japan or when I want to keep it simple,
I use store-bought salsa verde. I wanted a bit more veggies,
so I made a simple dish with sweet potatoes. American sweet potatoes are orange. I have Japanese sweet potatoes too, but for color,
I’m using these today. Drizzle olive oil and salt all over. Bake in the oven or toaster until cooked through. I found a small Japanese can opener. It seems to be old, but it’s surprisingly easy to use. It fits my finger and hand, like this. You can put your finger in it. It’s very easy to use. My sister also bought one. I recommend it.
It’s affordable, too. You can probably find it at Loft, Hands, and Amazon. Drain the water from the canned kidney beans. It seems I was simmering it on very low heat,
not just low heat. There’s more liquid than usual. I want to reduce the sauce,
but since I don’t have much time and it tastes good, I’ll leave it as is. Add the the beans and green salsa and simmer for a while. Meanwhile, finish the jicama and apple salad.
Add the cilantro and walnuts. The sweet potatoes are ready. Since we have tortillas,
those who want to eat will have these. Chili goes well with both bread and rice,
so we serve it according to everyone’s preference. I top the chili with cheese and mashed avocado. Let’s also put out the tortilla chips with the fall leaf design. Oh, so cute! I’ll bring some back to Japan for them.

(The tenderest gizzards I’ve ever had!) wow! I ordered Han Bang Samgye Tang,
which contains more herbal medicine. It’s been a while! So happy.
Samgye Tang! By the time I finished eating,
I was warmed from the inside out! We spent a relaxed time as usual,
and I was excited about my friend’s new challenge. I’m making breakfast burrito style tacos, today! I saw an ad for a McDonald’s-style breakfast yesterday,
and it made me want to try it! Mix salt, pepper, sage, thyme,
chili powder, garlic powder, and paprika, then, add ground chicken and mix. Since I’m thinking of breakfast sausage,
ground pork works well too. Add a little water and mix well until sticky. I love hash browns so much that I always keep them frozen. …And one more!
(I thought I had enough all the time, but I just don’t learn.) I cook frozen hash browns in the toaster oven. I’ve tried cooking them in a frying pan and a few other ways, but… my best way is to arrange the hash browns
on a baking sheet and keep cooking them without flipping. So, I’m going to cook them in the toaster oven. Chop bell pepper, and chives and purple onion for color. The chives have taken root, so I’m growing them in a planter. Mix the purple onion, vinegar, and salt. I added the vinegar to add flavor and enhance the color. Cook the seasoned ground meat in a frying pan with some oil. I cook all of it through, but I plan to use only half. You can put the leftover ground meat on bread to make pizza toast,
and the other day I tried it in fried rice, which was also delicious. Add oil to a frying pan and fry the bell pepper. Add eggs and little salt, and fry. Add the bell pepper and mix. ♡ Warm the tortillas. It may be a little overcooked, but it’s soft, so it’s fine. The tortillas are ready. I like my hash browns this crispy!
And yep, I definitely grabbed one too many, haha. Place the egg, ground meat, and hash brown on the tortillas. Add cheese on top. You can mix the cheese with the other ingredients beforehand,
or use sliced cheese to add more cheesy flavor — both ways are delicious! This time I used these small tortillas from Trader Joe’s. I’ve been preferring smaller tortillas for tacos
rather than larger ones for burritos lately. They’re also delicious in a burrito. I heated them in the toaster and melted the cheese. If you want something a little more junky,
you can add mayonnaise or ketchup. Sprinkle with some bell pepper and it’s done. My family won’t be home soon, so I’ll eat this first. The vegetables were whatever I had in the fridge. Delicious! You can adjust the spiciness to your liking.
Hot sauce, of course, but Tabasco goes well with it, too. A little refresh during working.
I brought some lemongrass from the planter. I usually make herbal tea with it,
but I’m going to add black tea today. I wonder if it’ll be tasty? Also some chocolate. It already smells good! Maybe I added a little too much lemongrass.
But still good. my sister is coming back with her daughter soon.
It’s going to be chaotic for a while… things will be lively! There were old cameras with film still inside.
I’ve been wondering about them for a while. I don’t even know if the films is still good or if it’s even usable. I decided to try using them when my sisters come back home. For now, I’m learning how to use an old camera. Today I’m going to make a quesadilla using the few tortillas I have left. First, I chopped an onion. I had some avocado in the fridge, so I’m going to make guacamole.
But it’s a bit mushy, so it might not be good. Once the avocado is ripe, I put it in the fridge.
Sometimes, like today, I find an avocado I forgot about—haha. I have a clear memory of when I started to like avocados
—it was during a family trip to LA when I was little. The night before, I ate the avocado my dad was eating,
but honestly, it wasn’t very tasty. The next day, I had an avocado salad at the farmers’ market
that was so delicious, and since then, I’ve loved avocados. The mashed avocado is seasoned with salt, pepper, lime, and grated garlic. Add chopped onions and cilantro for an extra kick.
And guacamole is ready! I’m cooking the filling for the quesadilla. Sauté the onions in a heated pan,
and when they become translucent, add the ground beef. Add grated garlic, tomato paste, and a little water if needed. Season with cumin, paprika powder, chili powder, salt, and pepper. I’ve always had cumin and paprika on hand
since I started cooking Mexican food. Quesadillas are cheese sandwiched between tortillas.
My family loves them. Restaurant quesadillas are delicious because of the generous amount of cheese.
Don’t hesitate to add cheese. I have an extra quesadilla, so I’ll make this too. The half-moon quesadilla, made with just one quesadilla,
is easy to eat and recommended for kids. Place cheese and ground beef between the tortillas and bake. My family brought home some beans, so I’ll eat those too. To meld the tortilla and cheese together and get a crispy surface,
I press down occasionally while cooking both sides. Once the cheese is melted, it’s ready. Serve with vegetables from the fridge as usual. Today I’m eating alone. I’ll leave one for family to try. The guacamole actually went better with plain avocado. though it’s good as a dip . My family called it refried beans, but it’s actually chili. My sisters are back. Welcome back!
