This spicy chili condiment is going to make your friends go green with envy. It’s a green sambar, so we’re mainly using green ingredients. Place everything in a food chopper and chop to a fine paste. You’ll find the full list of ingredients in the caption as usual. Blitz it to a fine paste and then fry it in hot oil for about 5 minutes for a lightly cooked paste, 10 for a deeper flavor. Finish off with lime juice and then store it in your jar for up to a week in the fridge or two weeks with a layer of oil. Easy, right? How spicy you make it is completely up to you. Use milder chilies, use spicier chilies, or even use one or two chilies with a green capsicum bell pepper to make a super mild samal ejo. Ejo is the Balines word for green. In Malay, it’s hijou.
