Cheesy ground beef enchiladas Rojas..

Cook 2 pounds ground beed.. I use 80/20
Season ( I use Don Sazon meat tenderize)

Boil 8 Chile guajillo or New Mexico Chile pods
1/4 onion
3 garlic cloves
Then blend all with
1 TBSP chicken Bouillon
1 Tsp chicken bouillon flavored with tomato
2 cups of the boiled Chile water
1 tsp cumin (optional)
Then Fry in a lil oil on medium/low for about 10 minutes

Cut up some onion and shred your fav cheese ( I use cheddar cheese and a lil mozzarella

Fry corn tortillas to a soft crispy

Set ups your station then
Dip your tortillas in the sauce
Put on a baking dish
Put some ground beef, onion and a lil cheese
Roll
Once all rolled put some more sauce on top of all enchiladas
Put the beef that’s left on top , add more onion if you’d like then tops generously with your fav cheese..
Bake at 400 for 12-15 minutes till cheese is melted good 🙂 and enjoy!

Remember that all ingredients are always optional and you can omit or add anything really 😁 let me know what you think 🥰
