Chef Indie the dog gives this recipe a 9/10! This whole wheat banana blueberry bread is absolutely scrumptious! Instead of vegetable oil, we used Greek yogurt and coconut oil for a healthy swap. The secret is toasting your nuts (walnuts and pecans) for a rich nutty flavor! Eating healthy doesn’t have to be boring, I promise. Enjoy this bread for breakfast or as a healthy snack.

Ingredients:
– 1/2 cup raw walnuts
– 2 tbsp. coconut oil
– 4 medium ripe bananas
– 1 large egg
– 1/2 cup pure maple syrup
– 1/4 cup nonfat plain Greek yogurt
– 1 and a 1/2 tsp vanilla extract
– 1 tsp baking soda
– 1/4 tsp ground cinnamon
– 1/4 tsp sale
– 1 and a 1/2 cups whole wheat flour
– 1 cup blueberries
Toast nuts for 8-10 min at 350 degrees. Keep oven on. Mix together wet and dry ingredients separately and then combine. Reserve some blueberries and nuts to sprinkle on top before baking. Bake for 30 min, tent with foil, and then finish baking for 25-30 min. until the bread is nicely golden brown & your test knife comes out clean (no batter). ENJOY!
