Making the CHIPOTLE BRISKET Bowl at Home
[Music] hello everybody welcome back to the channel and today we’re going to what is that well it came to my attention that recently chipotle released a new ditch into their menu and this is not just another ditch so today we will check the new brisket platter they are selling in their store for 10 dollars apiece yes the most expensive thing in their menu and it has a lot of good reviews online all major magazines and newspapers are talking very good about it so it is time for a ninja review alright miss ninja it’s time for us to give it a good try and see what’s up with this platter here i mean everything looks pretty sorry it’s like wow look at this look at the guacamole it looks really sad no colors at all i’m pretty sure they did this this morning onions i don’t know there is uh cilantro pico de gallo into this oh everybody’s been talking good about this thing but i don’t think that any pit master has ever tried this since he came out came out short time ago and it looks like it was burned on the outside there is no smoke ring at all but you know so are you supposed to cut brisket like this in teeny weeny pieces yeah this is disastrous but you know it is what it is let’s do it right let’s give it a try they put sauce on this thing it has like a barbecue sauce in it it has like a tomato based sauce it’s not going to be a barbecue sauce but i can feel it has sugar in it which is a big deal the the outside of the brisket is really hard a little bit spicy because of the sauce they put on it i have no idea what kind of sauce it is i don’t know either honestly if you put everything together when you’re gonna try a brisket you lose all the flavor of the brisket where’s the brisket flavor um i don’t it’s not juicy at all it’s not dry it’s tough outside it tastes a lot like sauce it’s not the brisket taste that we are all using oh the meat the flavor of it the smoke green the smoke nothing at all nothing i don’t know i don’t know weird stuff yep well i can’t tell you this i can do way better than whatever is on that platter and it’s time for me to show you first that means so i went to my favorite store brower made and fish and got me a brisket of course i don’t believe for a second that chipotle is selling prime or even choice brisket so to make it fair i got me a select brisket to compare and all the other ingredients we need to make this platter 10 times better but first i will use my secret weapon yes mayo as a binder for brisket this brisket is going to be lacking on fat so the oils of the mayo will help with that something else i’m doing is keeping it to a minimum on the rock i will be using salt and pepper for the wrap only that is 40 salt 60 pepper more or less i have no idea which rub they use on the brisket so to keep it fair i will go as simple as possible with it of course and no mistreating my brisket in any way by using this rub this has been used for many many years to create the best briskets in the world especially in texas and now it is time to cook this baby up first let’s get a thermometer into it so we can keep an eye on the cooks for flavor i will be using my amazing bourbon wood cut from all whiskey barrels to add those flavors to the meat link and coupon in the description and the brisket goes to the ground please see that i’m keeping everything very simple as i’m smoking my select brisket in a weather using a regular low and slow configuration now we’re just going to leave it down until the internal temperature gets to 165 degrees and then we wrap something i want to clarify is that the 165 internal temperature mark is just a guide the main thing you need to look for is for the wrap to set on the brisket the wrap needs to create a layer on top of the meat and not fall when you move it around wrapping with butcher’s paper will allow the uses the brisket generators to leak out of the wrap keeping it drier and better and back to the grill we go and now our new marker will be at 206 degrees again remember these are just guides as this is a select brisket it can take a little bit longer to cook poking the brisket would be the only thing that will tell you how’s everything going if there is no resistance in the poke then you are ready to go otherwise leave it there a bit longer and poke again once we are ready to pull it from the grill it is time to let it rest here is where we set it in the cooler and let it release heat very slowly with the brisket done and ready it is time to work on the other ingredients of the platter first the guacamole the main problem with guacamole will always be the avocados they need to be ripe and ready avocados like any other fruits start softening at the top and end softening at the bottom when making guacamole you want the softest and ripest avocados you can find so by pressing at the bottom part of the avocado you should know how ripe they are the softest the better taking the meat of the avocados off is very simple just get a spoon and work your way around between the meat and the skin avocados are also very low in acids and salts so we will need to add salt and half a lime another problem with the guacamole is that people put too much lime use to it that will change the flavors of the guacamole and make it taste more like lime now this is what a mexican will call a perfect guacamole but as we can see in the chipotle one they also add pico de gallo into it so we will do the same add some tomatoes in the mix red tomatoes in this case half of the jalapeno pepper just to bring the heat up about a quarter raw onion cut into chunks and some cilantro just to add the hair hairball nice taste to it [Music] for the sauce i have something even better than sour cream i call this one the mexican thick cream and goes this way half a cup of mayo 1 3 cup of sour cream 2 teaspoons of chili pepper 3 garlic cloves and salt to taste mix them all and get it ready to spread and of course we are not forgetting about the beans the ones from chipotle are kind of tasteless but we can fix that real quick for that we need to heat up some olive oil on the pan at medium heat to that we will add three garlic cloves cut into small pieces and about a quarter white onion finely cut cook for about three minutes or until that garlic get that nice golden color stirring every minute or so set the heat to high and add a whole kind of black beans into it let it get to a boil and set the fire to medium once the liquids reduce and it thickens a little bit take it out of the fire now we have all the ingredients together and it is time to assemble [Music] first the grass cut your lettuce into thin slices and set it in a bed in the bottom of the platter add your beans right on top of the grass now is when we add those nice slices of briskets i noticed they cut it into small pieces but i think slices look way better i know i mentioned that they add sauce on the brisket but to me and many of you too it will be a scene to add any sauce on top of this beauty next we will be adding the mexican thick sauce i just created just to make it look beautiful and finally to that color touch we will add the guacamole and this is the final result i really think we kill it this time but let’s get miss ninja in a blind test and see what you have to say all right miss ninja presentation wise what do you think about it unbelievable gorgeous sexy these look good guys look at that gorgeous it looks good man i mean the colors here are not that white sauce in there is weird vegetables sour cream it’s weird i might say let’s do this i want you to have a blind test for you to tell me which is the best here because we have to try it not that hard all right miss ninja go for a miss ninja [Music] hmm that’s covered a little bit spicy all right mm-hmm now let’s get into the second one let me finish this oh my god what happened totally different sort of different oh yeah all right this is your which one you like better the last one the second one the second one okay we have this this is this is only brisket okay and we’re going to try brisket against brisket here oh god so all right try that one okay i don’t know the texture is different the texture is different it’s hard i just i just bit into something that it’s hard all right that’s not a good brisket what is that all right let’s put your hand then let’s try number b here number b okay number b oh my gosh what happened yeah the difference is like from earth to moon tender which one you like better yeah which one you like better number b number b is the one that means yeah likes and number b is the one way kirk miss this is this is the weather this is a select remember alvarez this is a select brisket this is not supposed to be a grape brisket and this is great amazing it’s amazing good job baby you should open your own chipotle no they force you to say itself no heck no no i’m sorry guys the brisket that’s not brisket well guys here we tried that brisket this is guys a low quality brisket i don’t know why people is coming up and say that it’s amazing and no getting so many good reviews um maybe it’s people that is not used to good briskets i’m pretty sure there is no pin master out there that will come out and say that that is good in any possible way because it’s not and on top of that they put sauce on it which destroy completely the flavor you don’t feel brisket too much in there you feel barbecued something and do you know what it’s not they should shred it they cannot shred it i don’t know either that way that is not a brisket sorry but if you ever try a good brisket ever before you will already know that you won’t pay 10 bucks for this thing here because i don’t think it’s worth it i don’t think so in any Everyone is talking about chipotle brisket and I had to try it! but the taste test let me sad and disappointed so I decided to do it myself and see how good this chipotle brisket, they talk so much about, can be improved. I’m talking chipotle brisket from scratch, black beans, guacamole, Mexican sauce and of course that impressive brisket I can cook… mmm this was just a teat to the senses! Once it is all said and done we ended up with possibly the best brisket platters you’ll ever eat!

Agree with everything you say but at the same time I think the brisket is their best meat by far. Could use (a loooooooot) more salt though.
The only two times I like a sauce with brisket is in a bolognese, or using the juices from a partially sousvide brisket turned into a gravy

I'm glad you said what you said. Like all true brisket lovers when I saw that commercial I didn't think "That looks delicious!!"
My first thought was…"They're grilling brisket and taking away it's juicieness and tenderness away!" The things that make the brisket so unique and unbelievable amazing. It made me angry and made my heart hurt to know such a beautiful cut of meat was being so mistreated.

It came out delish and will be a repeat meal as my husband smokes briskets alot.
So whoever ordered that bowl from Chipotle left out a lot of the best stuff. Of course yours was gonna be light years better anyway but the Chipotle bowl when ordered properly is not bad at all. IJS 🤷🏽♂️
Yeah now that looks awesome..I like chipotle’s Brisket Bowls but they don’t put enough meat in your bowl..I always have to pay for a double order of meat which is basically one scoop of meat and they charge an xtra $5 bucks for that..then they get you for an xtra $2.50 for a scoop of guacamole so I buy a big pint of that at my local grocery store and use my own and it saves me a fortune…so if I can make my own Brisket that taste good I would rather make my brisket bowls at home instead of paying $30 dollars a pop for my mother and I to eat..
