Easy Chipotle Beef Burrito 🌯
Ingredients:
-1 lb ground beef
-1 cup uncooked white rice
-1/2 cup canned black beans, drained
-1 bell pepper, thinly sliced
-1 red onion, thinly sliced
-1 jalapeño, thinly sliced
-2 radishes, thinly sliced
-1 bunch of fresh cilantro, finely chopped
-juice of 3 limes
-cheese of your choice
-2 tsp onion powder
-2 tsp garlic powder
-2 tsp smoked paprika
-2 tsp dried oregano
-2 tsp ground cumin
-salt and pepper to taste
Chipotle Mayo Sauce:
-1/3 cup mayonnaise
-2 tbs chipotles in adobo sauce
-1 tbs lime juice
Instructions:
-rinse white rice and add to a pot with 1 and 3/4 cups of water; cover with lid and cook on stove top on low heat until tender and fluffy
-mix sauce and set aside
-place a pan or wok on high heat and add 2 tbs oil; sauté peppers and onions for 3-4 min then set aside
-add more oil and brown beef for 6-8 minutes; add seasonings and cook for another minute
-transfer cooked rice into a large bowl and add 2 tbs oil, cilantro, lime juice, and salt to taste
-heat 1-2 large flour tortillas in the microwave for 20 seconds
-layer tortilla with cheese, rice, meat, additional toppings, and chipotle mayo sauce
-heat a nonstick pan or flat top grill on medium heat and add 1 tbs of oil
-wrap burrito tightly and place seam side down on pan
-heat both sides of burrito for 1 minute until golden brown crust develops
-enjoy!
