Add colorful chicken thighs and summer vegetables and stir-fry. Add apple cider vinegar, dashi stock, and herbs. Click here for materials. In the previous video, we introduced the same dish with avocado added. The recipe is the same as this time. Here’s how to make it. Mix the seasonings first. Add kombu to the water. You can use dashi soup instead. Add apple cider vinegar. We use organic apple cider vinegar from Uchibori Brewery. This vinegar has a good balance of sweetness and sourness and is easy to use for cooking. Add 15ml. If you use something like rice vinegar instead of apple cider vinegar, it just isn’t sweet enough. Add mirin or sugar for sweetness. 15 ml of soy sauce. Add garlic and ginger. Grate each and add, but add ginger about half the amount of garlic. This completes the combined seasoning. If you want it sweeter, add sugar or mirin honey. Cut the chicken. Rub the salt all over and wrap it in a thick paper towel. Let it sit at room temperature for about 1 hour. I want to make it the same size as the other ingredients, so I’m going to cut it long and thin. You can also marinate the chicken with salt the day before and refrigerate overnight. Paper towels will soak up the moisture from the chicken. The meat will be tight and the flavor will be condensed. 2 eggplants. This is quite a lot. Reduce as desired. Cut 1 eggplant into 3 pieces. Chop it up. Sprinkle a pinch of salt on each eggplant. If you leave it for a while, water will come out, so wipe off the water. Peel off the skin of the tomato. Make a cross cut on the back side and dip it in hot water. This time I use a frying pan, so I don’t have much hot water. Roll it over and soak it in hot water to take it out. Plunge into cold water and remove the skin by hand. Cut into wedges. I use four mushrooms. Cut into 4 or 2 pieces. Cut the avocado just before adding, as it will darken the color. Seed the peppers and chop them. Let’s fry. I use a 28cm frying pan because there are a lot of ingredients. Heat it up and add the oil. It uses chicken fat. It’s delicious when you add animal fat to the eggplant. Heat the oil and add the drained eggplant. Let’s stir-fry until the whole is browned. At this time, bake so that the oil is absorbed. If you run out of oil on the way, add more. This is drizzled with olive oil. When it is browned, turn it around. Once it’s all cooked, take it out. Fry the chicken in an empty frying pan. Arrange them skin side down. Add a brown color. Turn it over when it is colored, and move it to the edge when both sides are browned. Add mushrooms. Cook the mushrooms so that they absorb the chicken fat . Cut the avocado while cooking. Insert a knife vertically, remove the seeds and peel off the skin. Hard avocados are suitable for cooking with heat. Cut it into a comb and cut it in half. When the mushrooms are coated with oil, add tomatoes and eggplant. After roughly mixing the whole, add the green peppers and avocado, and add the seasoning. Let it simmer. Make the fire a little stronger. Simmer without touching too much so as not to break the tomatoes. Add dried oregano and dried oregano. Simmer for 10 minutes without the lid. Since there are a lot of ingredients, make sure the chicken is completely submerged in the seasoning. The sweetness and sourness of tomatoes and the freshness of apple cider vinegar. With a variety of vegetable flavors, it tastes like Italian caponata with chicken added. It’s ready when the broth boils down a little and thickens. Let’s serve it in a bowl. It came out colorful. Pour in the remaining broth. Sprinkle finely chopped parsley. For adults, sprinkle with pepper. That’s it!
