Recipe #1 Tofu poke (:25)
Ingredients
1 pkg. Tofu Firm
2 Tbsp. soy sauce
2 tsp. rice vinegar
2 Tbsp. sesame oil
2 tsp. sesame seeds
1 garlic clove, minced
1-inch knob fresh ginger, minced
2 scallions, chopped
2 tbsp furikake or seaweed flakes
1 avocado
2 cups cooked rice
Veggies of choice,thinly chopped (I used carrots, cabbage, cucumbers and sea asparagus)
Instructions
Drain and dry the block of tofu with paper towels. Wrap the block of tofu in a thick layer of paper towels and place on a plate. Lay another flat-bottomed plate (or small cutting board) on top of the tofu and place a can or two of beans on the plate/cutting board to weigh down the tofu. Let sit for 30 minutes.
Cut the tofu into ½-inch cubes.
In a medium bowl, whisk the soy sauce, rice vinegar, sesame oil, sesame seeds, garlic, ginger, and scallions. Add the tofu and toss gently to coat. Cover and let the tofu marinate for 30 minutes.
To serve add to a sushi roll or rice bowl with fresh veggies. Top with vegan spicy mayo or soy sauce and enjoy.
Recipe #2 Tofu quiche (2:08)
Ingredients
Vegan Pie crust
1 package of firm tofu (patted dry)
2 Tbsp nutritional yeast
1 tsp garlic salt
1 tsp black pepper (to taste)
1 tbsp dairy free milk
1 tsp cornstarch
2 and 1/2 cups Mushrooms (Sliced)
Vegan ham (recipe here:https://www.youtube.com/watch?v=4LTWjeCDsG4&t=3s) you can sub vegan bacon bits or omit.
1 medium onion, diced
Vegan cheese (recipe here:https://www.youtube.com/watch?v=9NFkbfgselU)
Instructions
To prepare tofu filling, add drained tofu to a blender with nutritional yeast, garlic salt, pepper and dairy free milk. Set aside.
Prep veggies and prepared pie crust.
Add ½ of the mixture to the unbaked pie crust. Then layer with veggies and toppings.
Add the rest of the tofu mixture and top with vegan cheese.
Bake quiche at 375 degrees F for a total of 30–40 minutes or until the top appears golden brown and firm. If the crust begins to get too brown, loosely tent the edges with foil.
Serve with fresh herbs or green onion and enjoy.
Recipe #3 Crispy Tofu (3:56)
Ingredients
1 package of firm tofu
FOR TEMPURA BATTER
½ cup flour
1/2 cup cornstarch
4 cup aquafaba
1/2 cup cold seltzer water
Salt and pepper to taste
For frying
1 cup Peanut oil
1/4 cup cornstarch
Instructions
For tofu:
Start by freezing a block of tofu. This is going to change the consistency and make the tofu more dense.
Remove from the freezer and allow to thaw. Wrap with a paper towel or clean dish towel and press.
You can use a tofu press or by placing a cutting board on top and applying pressure.
Leave this to sit and press for about 30 minutes.
Now here is the secret: freeze the tofu again to create a chewy meat like texture.
Wrap and press for another 30 minutes, then chop into bite size pieces.
For Frying:
Pour enough oil into a dutch oven or frying pan that comes up from the bottom about an inch to an inch and a half.
Heat the oil on medium high to high heat
Prepare the batter by combining all the ingredients together.
Add ¼ cup of cornstarch to a large ziplock bag or container .
Add the tofu pieces to the large ziplock bag and shake until all the pieces are well coated.
Dip the pieces into the batter, then add to the hot oil.
Cook for 2-3 minutes on each side, until cooked through and crispy.
To Air fry:
Spray in a little oil to your air fryer to prevent sticking. Cook tofu at 350’ for about 10 minutes, or until golden brown.
Toss in your favorite sauce and enjoy.
Recipe #4 Ricotta “cheese” (6:09)
Ingredients
1 block of tofu
1 tbsp garlic salt
½ tbsp onion powder
½ tbsp italian seasoning blend
1 tbsp tahini (ground sesame seeds)
Instructions
Blend all ingredients and serve in lasagna, pasta rolls, or as a dip with crackers and fruit.
Pro tip: add in 1 tsp of tapioca flour and heat all ingredients on the stove for 5 minutes of medium heat then place in a mold to have a slice-able cheese block.
Recipe #5 Cream “cheese” (6:36)
Vegan cream Cheese
1 block of tofu
1 ½ tbsp garlic salt
½ tbsp onion powder
½ tbsp vinegar
½ tsp lemon juice
1 tbsp nutritional dry yeast
Garnish: fresh herbs or chives
Blend all ingredients and serve on bagels or as a dip with crackers and fruit.
Pro tip: add in 1 tsp of of apple cider vinegar flour and 1 tbsp of dairy free milk for a taste sour cream dip.
