Nicky’s Savory Stuffed Eggplant 🍆 Pizza 🍕 🤤

There’s alot going on in this world 🌎.   Cooking up delicious and savory food allows me to escape for just a little bit.  🙏🏽🥹❤️🌱✨️

At first glance, it looks like Stouffer’s French bread Pizza..yet it is absolutely delicious!!! 🙌🏽🙌🏽😋🍆🍕🌱✨️  Who’s making this? 👀👀

Recipe 🍆🌱✨️:

Prepping Eggplant 🍆:
– Preheat oven at 375° degrees
– Rinse eggplant thoroughly/Dry off
– Cut top-end (w/leaves) off
– Cut ✂️ eggplant down the middle
– Use spoon or knife to remove 1/4 of the inside (and seeds) out
–  Set sliced eggplant 🍆 on parchment paper.  Place on baking tray

Prepping sauce mixture:
– Add 1 tbsp of Olive oil to skilelt
– Add 1/4 cup of diced onions 🌰 (My preference is yellow onions)
– Add 1/4 cup of diced zucchini
– Add Field Roast Mini Pepperoni slices (I used about 20 mini slices and cut ✂️ in half)
– Add 1/4 cup of diced yellow 💛 pepper
– Add a few spoonfuls of sun-dried tomatoes 🍅
– Add one can of lentils
– Add 2-3 cloves of fresh garlic (I ran out so I used toasted garlic paste..yep..I surely did!)
– Add 1/2 cup of Prego (Mushrooms,  Tomato 🍅, and Garlic)
– Add 1/4 cup of Miyoko’s Creamery Liquid Mozzarella
– Mix and cook down mixture until nicely blended and liquid mozzarella melts well into sauce mixture
– Stuffed sliced eggplant 🍆 and sprinkle Italian Seasoning on top
– Place in oven for 15 minutes ( Watch eggplant carefully so it doesn’t get soggy)

Very Important: Please make sure your sauce mixture is thick and not too much liquid.  It will weigh down the eggplant and turn out soggy in the oven. 😌
