super aromatic and flavorful chili oil that you could basically put on anything in a pot toss in garlic ginger scallions a cinnamon stick bay leaves coriander seeds cardamom pods star anise and szechuan peppercorns cover that with oil and heat on medium low heat once the garlic is golden brown take it out and raise the heat so the oil reaches around 325 degrees fahrenheit now in a bowl combine chili flakes salt msg toasted sesame seeds and black vinegar pour that hot oil over and let it cool down to room temperature before bottling up and that’s how you make

Chili Oil

Ingredients

– 3 cloves garlic(smashed)
– 3 slices ginger(smashed)
– 3 scallions cut into thirds
– 1 cinnamon stick
– 2 bay leaves
– 1 tbsp coriander
– 3 star anise
– 2 black cardamom pods
– 1/4 cup Sichuan peppercorns
– 2 cups neutral oil
– 3/4 cup Sichuan chili flakes
– Salt to taste
– 1 tsp msg
– 1.5 tbsp toasted sesame seeds
– 1 tsp black vinegar

Instructions

1. In a pot, pour star anise, cinnamon stick, coriander, cardamom pods, bay leaves, Sichuan peppercorns, garlic, and scallions with the cold oil
2. Simmer on medium low heat(250°F) for 1 hour or until the garlic is golden brown(Make sure to take out garlic when browned).
3. In a separate bowl combine Sichuan chili flakes, salt, msg, toasted sesame seeds, and black vinegar.
4. Heat the oil to 325°F and pour on top of the chili flake mixture using a strainer.
5. Let cool down to room temperature before you bottle it up.
