[Music] Hi guys, and welcome back to my channel, At Home with Shelle, and to another foodie video. So, now we are officially in autumn. My slow cooker is well and truly in use a lot more than it has been over the last few months. And I just love slow cooker meals because you can basically just throw everything in there in the morning. You get home from work in the evening. It’s all done for you. Just saves that rush. I always feel so organized when I’ve done a slow cooker meal. So today I’m going to be sharing with you three super easy and delicious slow cooker meals that are low in calories, fairly healthy, and also good if you are following Slim and World. I have done a video, I think it was last year, with some other slow cooking recipes. So, I’ll link that down below if you want some more ideas, too. So, first up is a slow cooker curry. I absolutely love doing a curry in the slow cooker. I leave it on for quite a while and generally use um chicken thighs when I’m doing it. So, I buy the boneless and skinless ones and then all the chicken kind of shreds at the end, soaks up all the juices and it is just delicious. Again, super easy. And this actually serves six. So, it made us enough for two dinners. If you are serving six, and this comes in at 360 calories for the curry. Obviously, if you add any rice or anything, then you’ll need to add that on top. And is 2 1/2 sins per serving. These are all the ingredients that you’ll need to make the slow cooker chicken curry. Um, so I’m using chicken thigh fillets. These are the skinless and boneless ones. You can use the ones with the bones in if you like. You just need to remove the bones, but I just prefer these. And I’m using a kilogram of chicken fillets. And then in here, I’ve got one large onion, which I’ve diced. Um, a little bit of ginger and four garlic cloves. And I just diced these the other night when I was making dinner, just so it saves me a lot of time in the morning. Then I’ve got a can of light coconut milk. I’ll then need 3 tablebspoon of curry powder. You can use whatever curry powder that you want. Um half a teaspoon of chilies, a tablespoon of mango chutney, and a teaspoon of garam masala. And then I’ve just got some rice which I will serve it with later. So like most slow cooker meals, this couldn’t be easier to make. You basically put all of the ingredients into the slow cooker. So I’m going to put everything in here apart from the garam masala which I will add later. So in goes my garlic, onion, and ginger in there. Then got all of the chicken by Phillips. So you don’t need to chop these up or anything. Just pop them in whole. Um and then this kind of almost goes like shredded chicken. Um when once it’s done, which I really like. Um then I’m going to go in with the curry powder. So you want three tablespoons of whatever curry powder you’re using. You can use a hotter one or a milder one. Just using a medium one. So three in there. Honestly, this is so easy to make. And then half a teaspoon of crushed chilies. You can leave that out if you don’t want it too hot. And then a tablespoon of mango chutney, which looks like I’ve just about got enough. I’m trying to dig this out. There we go. So, I’ve got a tablespoon of mango chutney going in there. And then go in with your light coconut milk. So I’m just going to give that a little bit of a stir around. I’ll also add in some salt and pepper. And then you want to cook that on low for around probably around 7 hours if you’re doing it on low or you can do it on high for 4 hours. It’s a few hours later now and the chicken is done. And it’s basically just flaking apart. So, it does look quite runny. So, if you don’t want to flake the chicken, then you might want to add some corn flour at this stage. But, I’m just basically going to shred the chicken. And then that soaks up a lot of the juices anyway. And then just serve it with some rice. Any larger pieces that haven’t shredded yet, then just shred them with a couple of forks. And then all you want to do is add a teaspoon of garam masala and it’s ready to serve with some rice. A super easy slow cooker chicken curry. So that served three of us the evening. And then there’s easily enough here for another portion another night. And then what I’ll probably do with this is make a biryani which is I’ve I’ll link it down below. I’ve made it in my um on my videos before. It’s so nice. It’s basically like layered up rice and curry and crispy onion and it’s honestly so good. So, I will share that down below because that’s what I will probably make out of this. Next up is another kind of all-in-one dish. And it’s a chili concarni, but like a macaroni cheese version. I love this because it’s kind of like macaroni cheese. It’s got all the cheese and everything in it. But it’s also got a bit of a kick from the chili kind of concarni um base to it as well. I’ve made my own spice mix for this, but you can just use a packet of chili concarni mix. Um but like everything else, I’ll put all of the ingredients in the description box down below. In total, this comes in at 596 calories. And if you are following Slimming World, it’s basically sinfree, especially if you are using the cheese as your healthy extra a. So, in terms of everything you need, I’ve diced um one onion, one red pepper, one red chili, some coriander. I just have some in the garden. Couple of garlic cloves. Um I’m just going to quickly make my own spice mix cuz I have a lot of spices, so it’s just as easy. Um, but for ease, you can just buy a packet um, chili concarni spice mix. I’ve got some lean mint. So, I’ve got 500 gram of 5% lean mints. Some pata. I’ve got 700 g of pata here. Salt and pepper. Um, some kidney beans. And then I’ll add in some macaroni. And then later I’ll also need some chicken stock and some cheese to put on top. So, I’m going to start off by browning the mint. Now, you don’t have to do this bit. You can um completely leave this bit out if you like. I just like to do it because it adds quite a bit of flavor. You can do this in a separate frying pan. Um this slow cooker that I have actually does also go onto the hob. Um it’s really handy. It’s called the seal and sear or something like that. I’ll link it down below. I always get asked lots of questions about it. It’s really handy that you can do this. Obviously, it saves on washing up, too. So, I’m basically just going to brown that off really quickly, only for around three or four minutes. So, I’ve moved the mint back into the slow cooker. Then, to this, I’m going to add my spice mix. So, in here, I’ve just basically made my own chili conci spice mix. Um, I’ll leave it in the comments down below or on the screen. exactly the quantities that I’ve put in. If you want to make your own as well, it’s so simple. And then I’m going to add into here the onion. Got the chili. Two crushed garlic cloves. the coriander and then pouring over the pata. Give that all a good stir. I’m not going to season this because I added the salt and pepper to my chili concarni mix. Just give that a really good stir together. Pop the lid on and then cook that on low for around 7 to 8 hours or on high for 4 hours. So, I’m just going to take the lid off there. Give it a really good stir. It already smells absolutely delicious. Um, now I’m going to add in the rest of the ingredients. So, I’ve just weighed out 250 g of macaroni. So, I’ll place that in there. Then got the diced red peppers. 700 mil of chicken stock. Oh, dearing me. That I’ve just made up using a chicken stock cube. The drained kidney beans. And lastly, 50 grams of grated lighter cheese. So, I’m just going to give that all a really good stir together. And then leave that on low, probably for about another hour. And a bit in there. Or if you’re cooking it on high, will probably take about 45 minutes. Then I’m just going to top with another 50 g of cheese. And then that will go all nicely melted when we get back. So, we’re back from swimming. Dinner is ready. You can see all of the cheese has melted on top and now it’s ready to dish up. Delicious. And next up is a beef stew. Now, I couldn’t do a slow cooker recipe ideas without including a beef stew. We had this last weekend and it was so nice. We put it on in the morning, came home, had it with some lovely mash, lots of veggies on the side as well. And it’s just such it’s just comfort food, isn’t it? So, the beef stew comes in at only 184 calories per serving. So, this one that I made served four people and it’s also basically sinfree as well. So, it’s a great wintry, autumn, warming, comfort food. For this very simple slow cooker beef stew, you’ll need beef. I’ve got one pack here of um 400 g, but uh you could double that if you wanted more beef in it. There’s three carrots here that are halved and chopped. One onion that’s been chopped. You’ll need some tomato puree. Two uh stock pots or stock cubes depending on what you’ve got. some um worershir sauce, fresh thyme. I don’t have any, so I’m just going to use this uh dried thyme. And then you’ll need two bay leaves as well. And that’s 600 mil of boiling water. So, what we’re going to do is put some of it in the slow cooker initially just to um cook down and then it will go on for 4 hours. So, it’s quite a good stew. Um you don’t have to leave it for 8 hours to to make. So, let’s get on with it. What we’ll do is put the onions in the slow cooker first. If you don’t have a slow cooker that goes on the hob, then you can just do this in a pan and uh add it to the slow cooker afterwards. So, we need to let that soften for around about 5 minutes. Then, we’ll add the carrots, the bay, and the thigh. So, we’ve softened the onions down for about 5 minutes. Now, we’re going to put the bay, the carrots, and this is where you put your fresh thyme, but I’m just going to put some dried thyme. So, I’m going to put probably around a tablespoon of dried thyme cuz it does call for half a pack of fresh time. So, give that a stir um for about two more minutes. So, what we’re going to do now, just before we put anything else in, is just put in the beef just so it seals. We’re going to do that for a couple of minutes, not long. Uh, and then we’ll add in the rest of the ingredients and pop the slow cooker back in its um, container. Give that a good stir just so the beef starts to brown but doesn’t cook. Okay, so the beef is starting to sear. So, what we’re going to do is just add in the rest of the ingredients and then pop this back over into the slow cooker unit. Um, so what you’ll need to do now is we need to add in uh two tablespoons of worcersh sauce [Applause] to give it that like hearty flavor. Uh, 2 tablespoon of tomato puree. And then you can either use stock pots or stock cubes. So two of those. Uh I’m going to use stock pots. And this is the red wine beef stock pot. Uh I think this adds a bit more of a deeper flavor. Really, really nice. So yeah, just try and get all that out. That’s one. And I’d be reluctant at this moment to add any salt and pepper just because I feel like these are quite salty anyway. So, uh, you might want to add that a bit later on once you’ve let it cook a bit. And then what we’ll also do is just add in 600 mil of boiling water to that as well. And that is good to go. So, what we’ll do is we’ll move that we’ll give that a good stir obviously and we’ll move it back over onto the slow cooker unit. So, we’ve got the slow cooker in the unit now. It looks a bit watery, but it will cook that. It will obviously cook down, but what you’re going to do later on is actually add in um a little bit of uh corn flour, which will then thicken up the sauce a little bit more. So, what we’ll do is we’re actually going to put that on uh high for 4 hours now, but what you can do is put it on low for 8 to 10 hours. Uh and then you’ll have a really nice rich beef stew ready for later on where we’ll add some mashed potato and some vegetables. So, a few hours later and there you have it. A delicious stew which we’ll serve with some mash and veggies on the side. Just going to add a little bit of parsley. [Music] I then served the stew with some mash and a bowl of veggies for everyone to help themselves to on the side. So, they are the three slow cooker meals I wanted to share with you.
