Baking Apple Cake from Our Garden Harvest 🍎 A Slow Living Autumn Day 🍂

Have you ever noticed how your moods feel like the seasons? Sometimes it feels like autumn inside—like you’re changing from within. As if your old leaves are ready to fall, carried away by the wind. This season of life may feel cold, but it always promises a spring to come. We have a new family member—Neela. We’ve all fallen in love with her. It’s amazing how much warmth pets bring into a home. The apple tree is heavy with fruit—it’s finally harvest time. My daughter will be the one to pick them. The tree has given us more apples than we can eat. So I began dreaming of a recipe that would make them shine. In just minutes, our basket was overflowing with nature’s gifts. Meanwhile, Neela rests peacefully in the shade. We need to gather the apples before the rain spoils them. And now, the basket is almost full. There’s no way to store them all, so we’ll only pick the best ones. Big, unblemished apples only. My little monkey climbs the tree to help. I’m planning an apple cake with filling—a first-time experiment. Some apples have marks, because they grow without pesticides or chemicals. I’ll wash about two kilos, then peel, slice, and discard the bad parts. It takes time, but the process is so soothing. The aroma and juiciness of fresh apples is pure joy. Once I’ve prepared enough, it’s time to grate them. You can do it by hand or with a machine—what matters is tiny pieces. Next, I melt a little butter on medium heat. Then stir in the apples until they soften slightly. This is where cinnamon comes in—lots of it, because we love it. Then I turn off the heat and add honey. Sugar or syrup works too—it depends on your apples’ tartness. Ours are tangy, so I add extra honey. The apple mixture is spread across a baking dish. While it cools, I prepare the cake batter. This one’s from a ready mix—I just add butter and water. About one cup of water is enough. Mix until smooth and creamy. Then spread the batter evenly over the apple base. I try to keep the thickness the same throughout the dish. Into the oven it goes—preheated at 180°C. Placed in the middle rack, for about 35 minutes. The smell is incredible. Autumn is in the air. I let it cool for a bit, then flip it upside down. It worked! The cake is baked perfectly. The apple filling looks smooth and delicious. I try rolling it into a log—though maybe I should’ve let it cool longer. After chilling in the fridge, it’s ready for cream on top. A sprinkle of cinnamon, too. My family can’t wait to taste it. I take the first bite—paired with coffee, of course. It’s truly delicious—the best cake I’ve ever made. You must try it. Your kids will love it. On warm days, we rush outside to the garden. Soaking up the last rays before the long Scandinavian winter. We’re lucky to still have warm September days this year. Time for one last harvest from my vegetable garden. Some beets, and a handful of cherry tomatoes—such a blessing. As the sun sets, nothing feels better than a short walk by the sea. Autumn in nature reminds me of myself. Sometimes I feel tired, like I’m changing deep inside. But later I realize—it’s preparation for growth. We all need to break a little, to face inner shifts. Because only then do we see ourselves clearly. We learn, we grow stronger, and step into success. Don’t fear change—it always carries something good. With faith, there’s nothing to fear.
