Making Vietnamese Sandwiches | Weekend Picnic Prep | Clean with me
My happy weekends usually begin on Fridays Since the weather is so nice, I’m planning a picnic at the park tomorrow. I’m making carrot and daikon pickles because I’m planning to make Vietnamese sandwich- bánh mì I use a crinkle knife to cut the carrots and daikon, it makes them easier to pick up with chopsticks And the crinkly carrots and daikon look a bit more fun 😀 Add in some teaspoon of salt to draw out water from the carrots and daikon This will help the veggies stay nice and crisp, instead of getting soft once you pour the mixture of vinegar over. After about 20 minutes of marinating with salt, the daikon and carrots turn soft and slightly chewy I can bend them without breaking. Wash the carrots and daikon to remove the salt I’m not really the type to eat pickles on their own, but I do love them in a Vietnamese sandwich The pickles balance the flavors of the sandwich so nicely, especially alongside the meat and pâté. I used about 2 carrots and 1 medium daikon, and here’s my estimated amount of vinegar and sugar for the pickles 2 cup water, 1/2 cup of sugar, 2T salt, 1 cup rice wine vinegar The amount of vinegar and sugar water I cook wasn’t quite enough, so the recipe I just shared is about double Let it cool down. I like to reuse pasta sauce jars for storing my pickles, they’re just too practical to toss out. Today I will sterilize my jars with hot steam boil water Let it sit for about 3-4 minutes I was too confident that I can pick up my crinkly carrots with chopsticks, but I was wrong Oops… Because I used coconut sugar, my pickle juice has a darker color You can top it off with a bit of filtered water to make sure the carrots and daikon are fully covered. Place the pickle jars in the fridge, and they’ll be ready to enjoy in about 2 hours. I will also marinate the chicken thighs so I can bake it the morning 1.5 lbs chicken thighs, 2T oyster sauce, 1/2T of soy sauce, fish sauce, honey, sugar, cooking wine; 1t five spice 1T garlic powder One of the key ingredients is minced lemongrass, which adds a unique and fragrant flavor to the baked chicken. I bought the minced lemongrass from the frozen section at my local Asian market Now I will let this sit in the fridge so it will be ready for tomorrow morning I also start my laundry in Friday to save time in the weekend. I wash Emma’s clothes in the weekend to combine her clothes with her school bed that she bring home everyweek As I do the task, I am excited to think about tomorrow picnic It motivates me to finish more task before going out I want to clean the living room so my family can enjoy a clean, spacious place to be together. I put away my daughter’s toys before vacuuming, because seeing a tidy room motivates me to make it clean. I move all the chairs up so it’s easier to mop the floor. When I first bought castile soap, I was amazed by its natural, plant-based, and safe ingredients. I’ve been using it as an all-purpose cleaner, house spray, hand wash, and even dish soap Mix castile soap with water in the mop bucket, it makes a clean and eco-friendly floor cleaner Oops, I think I added a little too much this time, haha The fresh scent of peppermint drifts through the house as I mop the floor. This is the spot Emma likes to use as her little stage, she often dances or plays pretend here with my husband and me One of her favorite games is pretending to be a teacher, sharing with us the things she’s learned at school I hope I can continue nurturing Emma’s bright and cheerful personality as she grows. The kitchen is my last stop for mopping. Since it’s a high-traffic area, it gets dirtier than the other spaces Another task checked off my list. My clothes is done washing Ever since I discovered wool dryer balls, I’ve been using them every time I dry my clothes. They help everything dry evenly and are such a simple, eco-friendly alternative to store-bought dryer sheets. This morning, I woke up and got ready right away I feel like when we have something to look forward to, we naturally manage our time better Most weekends are simple for us, grocery shopping, cleaning, cooking, and sometimes taking Emma out to play It may seem ordinary, but there’s a quiet beauty in these repeated moments. I truly cherish this time with my family, especially with my daughter First, I’ll bake the marinated chicken thighs that I prepared overnight For the first round, bake the chicken at 400°F for 15 minutes, then flip it over and bake for another 15 minutes. My husband loves helping me around the kitchen, and that is one of the things I’m so grateful for about him This is Vietnamese “banana leaf pork sausage”, a familiar ingredient in Vietnamese sandwich We bought it from the Asian store, in the freezer section Once it thaws, we use it all up for different dishes, like Bun Bo Hue, or just enjoy it as a snack. While the chicken is in the oven, I’ll get the other food ready for our picnic I read that soaking fruits and vegetables in baking soda can help remove most of the surface-level pesticides Gently rub the fruits to remove any wax coating. Giving the fruits a quick bath. The chicken has baked for 15 minutes And my kitchen is now filled with the fragrant aroma of roasting meat and lemongrass. Now I will bake the chicken for 15 minutes more Like in any cuisine, herbs may be small, but they have a powerful impact on a dish. Cilantro is just like that for bánh mì. I keep pre-cut cilantro in an airtight container, so it’s ready whenever I want to make a sandwich After soaking the fruits in baking soda water for 15 minutes, rinse them again with water The chicken is done cooking Let it cool down a little before making the sandwich To keep precut apples from turning brown, soak them in water with just a pinch of salt. Peach season isn’t over yet, so I’m enjoying them as much as I can. Not sure if you’re like me, but pre-cut fruit always seems more delicious than whole fruit, haha Cut the bread into portions, then bake at 320°F for about 8 minutes until lightly crispy. I chose the toasting setting on my air fryer. This is the vegan pâté I made, it’s something I shared in one of my previous videos. My husband loves pâté, so I learned to make it at home for him. When putting together a Vietnamese sandwich, feel free to add whatever you like and leave out anything you don’t The pickle I made yesterday is ready to eat I just realized I forgot to put cilantro in the sandwich. Vietnamese sandwiches are ready! Today, I’m using beeswax wrap for my sandwich. It’s my first time using beeswax, so I’m curious to see if it’s easy to handle and holds the sandwich together well. I’m surprised how easily the beeswax wrap folds and sticks with just the warmth of my hands. This makes a great alternative to using ziplock bags or plastic wrap. In Vietnam, people often enjoy a bánh mì sandwich with a glass of iced milk coffee in the morning. So I made some coffee to take along to the picnic. Vietnamese coffee gets its sweetness from condensed milk. I reuse a peanut butter jar to take my coffee on the go My picnic preparation is done! 😀 We came to the lake for a picnic. The weather is perfect, with the cool breeze of early fall and the warm sunshine of late summer Emma is so happy sitting and eating on the grass, and all the morning prep feels completely worth it. We enjoy our bánh mì with coffee and fresh-cut fruit Emma’s already planning, she wants pizza with macaroni and cheese for our next picnic!
