It is fall officially and we’re still in triple digits here in Arizona, but we are doing a fun weekend getaway. My family and I are getting away for the weekend and uh gonna be enjoying some cooler weather. It’s just a drive away, but what I’m going to do today is share with you a little healthier snacks that we are taking along with us and you are going to be surprised at a couple of these ingredients. Uh you never know that these things were healthy. So, I hope you stay tuned for that. I’m also going to share with you a bag that a company by the name of Nomad sent to me. I’m going to unbox it right here in front of you and give you my honest review. But I hope it’s going to be perfect for taking on a two-day trip, just a little getaway we’re doing here. Just enjoying some family time. Let me know if you like these kind of impromptu type of videos because I think that that’s going to be so much fun. You can always be sure in um August and early September that we’ll have some monsoons or some rains or some heavy winds or something like that. So, I’m not sure if the light’s going to stay consistent. We will see. Anyway, if you’re brand new to my channel, I do hope you’ll stick around. I hope you’ll subscribe to my channel, like this video so that I know that you like this type of video. Go ahead, get your little pen and paper out, and let’s get started. [Music] Now, I’ve made this recipe only once, but they were a total hit. My kids loved them. I loved them. So good. Definitely a repeat muffin that we’re going to be making over and over again this household. I also want to mention that these these are super healthy muffins and you never know the secret ingredients in these muffins. So, um anyway, unless you tell somebody, right? If you’re trying to get somebody to eat healthy, just serve them up. Any brand, any type of cocoa you like. I bought the kind from Trader Joe’s. I’m using this healthy fat avocado oil um for this recipe. It was really good the last time I used it. I’m going to use some baking soda. I’m also going to use canned sweet potato. Now, you can definitely roast your own sweet potatoes or microwave some sweet sweet potatoes. Um, I’m going to be using canned today. I just think it’s really um much easier today for my schedule. You’re going to need some vanilla, some flax seed. I get my flax seed from Trader Joe’s. This is ground flax seed. I’m using some salt. I’m using some these this is oat flour, but you can definitely grind your oat flour up. And then the next thing I’m going to use is some maple syrup to sweeten. And um this is going to be a fantastic recipe. So, let me go ahead and pre-measure things and then we’ll get started. First, you’re going to want to mix all of your dry ingredients. And so, we’re going to go ahead and mix this 1 and 3/4 cups plus 2 tablebspoon of your oatmeal. Go ahead and add that to the bowl. 2 tbsp of ground flax seed. 2 tsp of baking soda and a half a teaspoon of salt. And I just mix that together. And I’m going to pour that in. This recipe does not call for baking powder, only baking soda. Half a cup of cocoa powder. You could use cacao as well. Stir that all together. Now, with the wet ingredients, you could definitely blend these ingredients in your blender. I just feel that it makes too big of a mess. I’m just going to blend it with a fork. Make it completely easy. You could use pumpkin if you wanted to. I’m using sweet potato. I’m using one cup. I’m using 3/4 cup of maple syrup, half a cup of avocado oil, half a cup of milk of your choice. You could use almond milk, oat milk, you could use whatever you like. I’m using 2%. Half a cup. 1 tbsp of vanilla. 1 tbsp. These are fantastic. These are silicone and they have the metal frame so you can place them in. I still put it on top of a cookie sheet, but as you can see, they’re really, really flexible. And if you let these cool to the touch, you can literally just pop them right out. They’re so good. So, here’s the key. You want to keep it at 425 for 5 minutes. Set a timer for 5 minutes and then lower the temperature to 350 and keep them in there for another 15 minutes and then check with a toothpick to see if it comes out clean. Just pop them out of the oven. So, they are not cooled off yet, but I want to make sure that they are done. And I’m just going to take this toothpick and go into the largest one. And I’m going to poke it all the way down to the bottom and pull it back out. And that looks good. So now we’re going to let them cool completely in this silicone muffin pan and then I’ll show you how easy it is to pop them out. Hang on. Okay, the next recipe we’re going to make it is my homemade granola. No need to buy granola at the store. In fact, I can’t see myself buying granola unless I was totally in a pinch because it is so easy to make and you can customize it however you’d like and that’s what I love about it. So, um, today it’s just going to be my classic granola, and I’m going to be adding all the fruits and nuts at the very end. So, I do not bake the fruits and nuts into my granola. Sometimes they just get a little bit too roasted, and I don’t really like that. I really prefer the fresh um ingredients when it comes to the nuts and fruits. I’m going to go ahead and start with three cups of organic rolled oats. Now, mainly I use organic oats because I do a lot of overnight oats and since I’m not cooking them, I want to avoid pesticides. Three cups of oats into my bowl. This is super easy. You won’t want to buy this again if you know how easy it is to make. So easy, so quick. You don’t want to overbake this, too. That’s my That’s definitely a tip. You can omit the protein if you want. Um I have found a protein powder that agrees with me. It’s a clean protein powder. I found it at Costco and I actually quite like it. It’s nice. Um very nice and light. So um I’m just going to use one scoop of the protein powder in the oats. Now, I’m going to use as much cinnamon as I like. And I think I’m going to do maybe a teaspoon. I’m going to add a little bit of salt. That just brings out the flavor and everything. That’s not really measured. 2 tsp of vanilla. And that’s just two capfuls into the mix. It’s so easy. You just add everything to one bowl. Now, depending on how sweet you like your granola, I’m going to go for um semieet. Half maple syrup, half honey, and I’m going to be using um an 1/8 of a cup of each. So, it’s going to make a/4 of a cup. I’m just going to use my 1/4 cup, fill it halfway full, and then fill it the other half with my honey. Okay. And I’m just going to pour that right in. Stir this together. Make sure your oven is preheated to 350. My oven is at 350. And I just wanted to share with you that I didn’t saturate these. They are all covered. And you can kind of tell when you stir them that they’re all covered. And all you want to do is pour them onto a lined um cookie sheet. And you want your cookie sheet to be fairly large because you do want to spread everything out so that it has a chance to crisp up. So I’m just going to dump it on and then I’m going to gently spread it out. I’m going to drizzle just a little bit more honey over the top. And I’m going to pop it in my 350°ree oven for about 20 minutes, watching it, flipping it about the 10-minute mark. And then make sure to watch it. You don’t want it to really get past the point of golden brown because it’ll kind of burn. It’ll have a little burnt taste. Um, make sure you watch it. And even if it doesn’t feel firm when you once you pop it out, um, it’ll still harden up as it sits. So, make sure you don’t overcook it. And I’ll share with you what it looks like and then we’ll add the additions. So, hang on. This company called Nomad sent me this package and it’s a overnight bag and it’s supposed to fit under a airline seat. So, this is going to be like the perfect size bag to accompany me on my 2-day trip, like a dust bag. These are leather straps. This is weather resistant. This actually goes onto your rolling suitcase. It’s a really large pocket on the side. Look at that. But that’s a really big pocket. Let’s see this. Oh my goodness. Look at this. Definitely packing your clothes. Here’s a separated compartment with the mesh inside here. I haven’t packed it yet, but I wanted to kind of share it organically with you guys. This is a clear bag. And then on the inside, you have a bag with some pockets and a zipper. And it’s that same material. Feels really good. Uh-oh, I got to get to my granola. Um, so many different pockets and definitely a nice fabric. You can tell it’s really nicely made and will really last a long time. So, it’s got the little feet. It is a little bit of an investment. And I think it’s over $200. They sent this to me. I will list it in case you are shopping for a bag that will last. I just took this out of the oven after 10 minutes to flip it. And I want to show you it is almost done. I do not want this to overcook. It’s going to harden up as it sits. And I’d rather a little bit more of a granola kind of at trail mix type of um texture. Okay. So, let me share with you what this looks like and how much time I kept it in the oven. Hang on. I let it go for about another 7 minutes. So altogether you should probably do um about 13 minutes. That’s probably what you should do. Flipping it in between. And as you can tell, it got a little bit too golden, but I’m still going to love it. I’m going to add about a/4 cup of cashew pieces on the top. Smash these pecans up cuz they were whole pecans. Um about 1/4 cup. And I’m just going to go ahead and add that. And then I’m going to add some almonds. I would say about 1/4 cup. And you know, you can just, you know, make this your own, customize however you want. Use whatever type of nut you want. This is walnut pieces. About 1/4 cup of those as well. I’m going to add about a/4 cup I do about a third cup of coconut. A third cup of coconut. There we go. You can do any kind of fruit you want. You can even do freeze-dried fruit if you want. About 1/4 cup of dried raisins. And then after it cools, I’ll add it to a zip lock. But let me give it a little taste while it’s warm. That is so good. Not too sweet, but just sweet enough. And you’ve got the sweetness from the from the dried fruit. This is so good. It’s going to be great to travel with. Just a great snack to grab and it’s going to be wholesome. Okay, so now let’s look at the muffins. Hang on. Okay, now since this has all cooled off, it’s like, you know, I can handle it. Just literally pop it out and pop it onto a wire rack. And then you just pop this right into the dishwasher and it comes out so clean. I would suggest putting these in like a um Tupperware, you know, a glass Tupperware, and kind of layer them with parchment paper in between. And that’s how I would store them. I wouldn’t store these on the counter and I would also um just heat them up for about 20 seconds like in a paper towel before you eat one. But these are so good. Okay, but look at all these. Oh, by the way, we’re only traveling about 2 hours away, so these are going to be fine. M. Oh, man. Those are so so rich and so yummy. You can’t tell there’s sweet potatoes in there for sure. Oh man, those are good. You’ve got to try them. I’m going to leave all the recipes um down in my description box. So, go check them out. Let me know if you make them. Um I’m going to get to packing. Granola Recipe
   •   3 cups granola
   •   1/4 cup syrup
   •   1/4 cup honey
   •   1 scoop vanilla protein powder
   •   Pinch of salt
   •   2 tsp vanilla
   •   1 tsp cinnamon
• 1/2 cup Avocado Oil

Add next 3 ingredients after baking.
   • 1/4 cup coconut flakes
• 1/2 cup Dried Fruit
• 1 Cup Nuts

Instructions:
1. Mix everything in a plastic bag or Bowl
2. Spread onto a lined baking sheet.
3. Bake at 350F for 13-20 minutes, turning halfway through.

Allow to cool as it will become crisp-
Store in Zip lock or Sealed container- I found that it stores well in cabinet.

Chocolate Muffins
   •   1 3/4 cups + 2 tbsp oat flour
   •   1/2 cup cocoa powder
   •   2 tbsp ground flax
   •   2 tsp baking soda
   •   1/2 tsp salt
   •   3/4 cup maple syrup
   •   1/2 cup avocado oil
   •   1/2 cup milk
   •   1 cup sweet potato or pumpkin (mashed)
   •   1 tbsp vanilla

Instructions:
1. Preheat oven to 425°F. Line a muffin tin with 12 liners.
2. Mix all ingredients together until smooth.
3. Bake at 425°F for 5 minutes, then reduce heat to 350°F and bake for an additional 15 minutes.
