子ども5人を育てた沖縄スーパーお母さんが作る愛情たっぷりタコライス

Hello. From now,
we’re going to make a nuchigusui (“medicine of life”) meal. My favorite wooden cutting board. First,
take out the ingredients for taco rice. Take out cherry tomatoes, lettuce, onion, and garlic. Next, making the meat.
Peel the onion. Then,
finely chop the onion. We’ll use one onion. Chop the remaining onion the same way. All minced and ready! Put the chopped onion
into a bowl. Next,
peel the garlic. And now… garlic. Slice the garlic thinly as well. We’re going to use plenty of garlic. Get a frying pan ready. Preheat the frying pan. Prepare a bowl for the lettuce. Drizzle
olive oil into the pan. Take out the mixed ground meat from the fridge. Here’s the mixed ground meat! Bought at Yonabaru Butcher (direct shop of Kanemasa Meat).
Using their original brand pork, “Pineapple Pork.” Add the garlic
to the heated pan and sauté lightly. Then add the mixed ground meat. Stir-fry the meat until the color changes. On the next burner,
the cream soup is cooking at the same time. When the meat changes color,
add the onion. Stir-fry everything well over high heat. Now
season it with spices. First, add two pinches of salt. Next, add a suitable amount of black pepper. Stir-fry again. Add chili powder to bring out umami. With the chili powder added,
the dish is taking on color. Prepare ketchup and all-purpose sauce. Add 3 tablespoons of all-purpose sauce. You can substitute
Worcestershire sauce for the all-purpose sauce. Meanwhile, for the cream soup,
we’re drawing stock from chicken bones. Add 5 tablespoons of ketchup. Add 2 teaspoons of curry powder. Here’s the curry powder! Two teaspoons of curry powder. All the seasonings are in. Turn to high heat and stir-fry once more. The kitchen fills with the aroma of spices. Cover and simmer gently for about 15 minutes. We’ll reduce it a little. While it reduces,
continue making the cream soup. After simmering about an hour,
take out the chicken bones that yielded the umami stock. These are the chicken stock bones. The stock is ready. This time we’re using chicken necks
to draw a richly flavored broth. Chop the onion for the cream soup. Finely chop it the same way as for the taco rice. Mince it even finer. Seems we’ll use
a full onion—plenty of it. Add the chopped onion to the pot. Onion going in! Lots of onion! They say onion brings out
natural sweetness and umami. Cook both pots gently over low heat. Next,
peel the carrot. Cut it into batons. Then into thin strips, and chop finer. When done, add it to the pot. From the fridge,
take out the milk (Okinawa’s standard milk). We’ll add two cups of milk. Add two cups of milk. After adding the milk,
simmer for about 20 minutes to reduce. Putting the lid on now. Stir the meat while checking the finish. Looks delicious! Seems we’ll cover it and simmer a bit longer. Prepare lettuce for the taco rice. Our dog Chocolat barks, asking for lettuce. The dogs come over to beg when they smell their favorite food. Shred the lettuce thinly. Put the lettuce in a bowl and rinse quickly. We’ll chill this in the fridge. After draining, it goes into the fridge to chill. Slice the cherry tomatoes
for the taco rice topping. Today we’re using petite tomatoes. They say you can use
large tomatoes or cherry tomatoes for the topping. Taste the meat here. Let’s try it. Mm! Delicious! All done! The taco rice meat is finished. Now we’ll make the salsa sauce. Prepare a bowl for the salsa sauce. First, cut half an onion. Chop it finely. Mince it. They say finely mincing the onion
makes the sauce smoother. Next, I’ll mince the green pepper. Mince one green pepper. Don’t forget to check the cream soup. Then finely chop the tomato. Use a whole tomato—nice and generous. This tomato is super ripe. Seeing how ripe it is,
I can’t help but react. Then grate the garlic. I’m grating the garlic now. We’ll use one clove of garlic. Next is half a lemon— Squeeze half a lemon by hand. Adding lemon
gives it a refreshing taste. Finally, add ketchup, rice vinegar, and honey. Add 2 tablespoons each of rice vinegar and honey. Then add 2 tablespoons of ketchup. After adding the seasonings,
mix until everything comes together. I’ll add a little salt. Lightly crush the tomatoes
while mixing everything together. Once it’s blended, taste it a bit. Delicious! Salsa sauce is done! Chill the finished salsa in the fridge. Check on the simmering cream soup. Seems it’s reduced nicely. Granulated consommé is
a seasoning made by concentrating the flavors of meat and vegetables
into fine granules. Add a suitable amount of salt. Stir so the seasoning spreads evenly. Taste the cream soup. Yes! We’re good. All done♪ The cream soup is finished. Served on Meegu’s favorite antique plate.

a plum soda made with homemade plum vinegar. This homemade plum vinegar
was made with plums from a friend. This is plum vinegar. Add a little at a time,
watching the amount. Searching hard to add some plums. Finally found the favorite plums. Add soda water. On hot days, you really crave fizz. Homemade plum soda is done. Taco rice is a popular Okinawan dish

今回は、5人の子どもを育てた沖縄の50代主婦・めーぐーが作る、家庭のタコライス。
タコライスは、メキシコ料理「タコス」の具材(タコミート、レタス、トマト、チーズなど)をご飯にのせて食べる、沖縄発祥のオリジナル料理です。
工夫を重ねた味は、今も我が家の定番として受け継がれています。

⚫︎タコライス(3〜4人分)
・合挽きミンチ 500g
・玉ねぎ 1個
・にんにく 2片
・ケチャップ 大さじ5
・万能ダレ 大さじ3
・チリパウダー 小さじ1
・塩 少々
・こしょう 少々
・カレー粉 小さじ2
※万能タレの代わりにウスターソースで代用が可能です。

・トマト 1個
・ピーマン 1個
・玉ねぎ 半分
・レモン 半分
・ケチャップ 大さじ2
・はちみつ 大さじ2
・にんにく 1片
・酢 大さじ2
・塩 少々

・鶏首(ネック)だし骨 500g
・玉ねぎ 1個
・人参 半分
・牛乳 400cc
・水 3カップ
・コンソメ 2個
・塩 少々

    めぐちゃんファミリーの大ファンですのでいつもコーヒー入れてソファーに座ってテレビ画面に見入っています。
    撮影上手、そして料理工程の説明もバッチリで大好きです。
    私は沖縄県大好き人間で19回行ってますがタコライス食べた事無いです。
    12月に16日滞在していました。
    又11月に沖縄県に行く予定です。
    タコライス、万能ダレ、サルサソースどれもめっちゃ美味しそう❤❤❤❤

    五人も子供さんを育てたママなのにギンギンしてないし、穏やかで優しくて料理が上手で素晴らしい👍
    私は三人子育てしながら会社員して定年退職しましたが忙しい忙しいと二言目には言ってたような気がします。

    沖縄だったらタコスミートの素が沢山売ってるから、肉にシーズニング混ぜて完成〜って出来るのに、こんなに一から丁寧に作るとか沖縄県民でも珍しいはずよ〜
    少なくとも私は作ったことない😂

    しかもクリームスープを鶏ガラからってありえんさ〜キャンベルスープが簡単なのに、ほんとめーぐーは子供達のこと考えて丁寧に暮らしてるのが見て取れる。ベストオブアンマー賞だね❤
