焼き菓子よりも断然簡単、生チョコの作り方:How to make Chocolate Ganache | Veggie Dishes by Peaceful Cuisine

Hi eeveryone I’m Ryoya. I made chocolate ganache today. I tried to make recipe with different ratio and ingredients. In this video, I used cacao butter, cacao powder and sweetener to make a chocolate part which is normally made with store-bought chocolate. Some uses cacao paste but I didn’t use it today. I bought these ingredients, then create the recipe with the ratio and the bitterness that I like. When I tried to create recipe, I also used store-bought chocolate. I used this chocolate in the chocolate muffins video a few weeks ago. I made chocolate ganache with this store bought chocolate as well. I used these ingredients about 100g in total to make the chocolate part. so, I used about 100g of this store-bought chocolate.
And the result was really fantastic. store bought chocolate is well emulsified, so the texture is amazingly smooth. But, If I used this, Ingredients I need is just two of them. Chocolate and coconut milk. It’s too easy to make recipe video so I decided to use those ingredients. If you really want to make smooth ganache, I recommend to use this. But it is kind of hard to find organic vegan chocolate especially in Japan. Even if you find one, it costs like $8 for just 100g chocolate bar. That’s why I recommend this. I’m not sponsored by this company though. Lol
This costs less than $35 for 1kg of chocolate chips. It means it’s less than $4 for 100g chocolate.
I think it’s a good deal. If you really want to make chocolate ganache just like the ones on the market, don’t use these ingredients. Use store bought chocolate like this. I used rice syrup today, which is kind of unusual. I tried to make with maple syrup but the result was too watery. the texture was really rough. So I used rice syrup this time. You could use maple syrup but the texture would be not so good. well, that’s it? Actually there’s no tips for this recipe. You don’t have to do tempering, just put all the ingredients into a pan, heat, pour into container, chill and cut. Done. This is really easy recipe to follow, so I hope you try this out. 今週のレシピは、生チョコレートです。

基本的には生チョコレートを作るのにテクニックなどはほぼ必要ありません。どんな材料で作るかで、味や食感などがほぼ決まります。

市販のヴィーガンのチョコレートは絶対的な数や種類が少なくて、普通の乳製品入りのチョコレートに比べてカカオ含有量を選べたりなどの選択肢はほとんどありませんので、最初は市販のヴィーガンのチョコレートを使用してチャレンジしてみて、もっと色々と自分好みの味に仕上げたいと思った時に、市販のヴィーガンのチョコレートを半量、残りの半量はカカオバターやカカオパウダー、甘味料を自分で調節して作る、というようにするのも良いかもしれないですね(^^)

【材料 生チョコ10個分】

・カカオバター 30g
・カカオパウダー 30g
・米飴 50g
・ココナッツミルク 50g
・洋酒 大さじ1

【作り方】
《1》 カカオバターを細かく刻んで鍋に入れ、極弱火にかけて溶かします。
《2》 残りの材料を全て加え、均一に混ざるまで混ぜ合わせます。途中、冷えて混ぜ辛い場合は弱火にかけて溶かしつつ混ぜ合わせます。
《3》 ラップを敷いた容器などに流し入れ、冷凍庫で冷やします。
《4》 一口大に切り、カカオパウダーを振りかけて出来上がりです。

This week’s recipe is “Chocolate Ganache”. This chocolate ganache is called “nama chocolate” in Japanese. Basically nama means raw, but here it expresses the soft texture of the ganache. In this video, I blended cacao butter, cacao powder and liquid sweetener instead of using store bought chocolate. To be honest, You’d get better texture by using store bought vegan chocolate. But since the number of vegan chocolate is limited at stores compared to ordinary chocolate. It might be a good idea to use half store-bought vegan chocolate, then you add your choice of cacao butter, cacao powder and sweetener.
Anyway, enjoy the recipe!

【INGREDIENTS】

30g cacao butter
30g cacao powder
50g rice syrup
50g coconut milk
1 tbsp liquor

【INSTRUCTION】
1.put cacao butter into a sauce pan, gently warm it up.
2.Put all the remaining ingredients and stir well. If it’s too cold to be blended, put it on a stove and gently warm it up again.
3.Pour into wrapped container and chill in a freezer.
4.Cut into small pieces and sift cacao powder on top.

  2. 最近ロベールという会社のチョコレートを知ったので、いつか買って色々挑戦したいものです。カカオ含有量の種類が色々あり、ホワイトもあるので気になりました。コスパも良さそうです。
    カカオ生産国がチョコレートを作るまでの仕事を出来る為、フェアトレードを越えるレイズトレードなるチョコレートとのことです。

  7. I think to people who want to use maple syrup, instead of using coconut milk, use coconut cream. Put your coconut cream’s can into the fridge overnight and take out only white cream part.
