How much was that brisket $60?
In the US Suadero is known as "Rose meat" where some stores may carry it; specially where many Latinos reside. Your local butcher will definitely cut it for you upon request. Argentina call it "Matambre" and Colombia "Sobrebarriga". This is the cut Colombians use to make shredded beef similar to your great recipe.

Why is the liquid a red/orange colour after you add the water?
