🍅 Kinamatisang Manok Recipe
Ingredients:
* Chicken (cut into serving pieces)
* 3-4 ripe tomatoes (quartered)
* 1 onion (sliced)
* 4 cloves garlic (minced)
* 1 thumb-sized piece of ginger (sliced)
* 1–2 tablespoons fish sauce (patis)
* Salt and pepper to taste
* 1–2 cups water or chicken broth
* Oil for sautéing
* Optional: green leafy vegetables (like pechay or spinach)
Instructions:
1. In a hot pan with a little oil, sauté chicken pieces until lightly browned on all sides. Set aside.
2. In the same pan, sauté onions, garlic, and ginger until fragrant. Add the tomatoes and cook until they soften and release their juices.
3. Return the chicken to the pan. Stir well to coat in the tomato mixture, then pour in a bit of water (just enough to simmer). Cover and cook for 20–30 minutes until chicken is tender.
4. Add pechay or any leafy greens and simmer for another 2–3 minutes until wilted.
5. Enjoy with a side of steamed rice.
