Ingredients

– 1 tbsp olive oil

– 2 garlic cloves

1 onion

300g peeled pumpkin

– A bunch of sage Leaves

– 2 1/2 cup vegetable broth

70ml single (vegan) cream

– 160g @THEMAKINGMASTER no-chicken

2 tbsp nutritional yeast

60g (vegan) mozzarella

– 100g Lasagna pasta sheets

– Toppings: hazelnuts, vegan ricotta, sage

Method

– Add the olive oil to a large pot and bring to medium heat. Add the chopped garlic and onion and cook for 5 min until golden brown.

– Add the pumpkin, sage and the vegetable broth. Cover with a lid and cook at medium heat for about 20min until the pumpkin is soft. Season to taste. Remove from heat and use a blender to make a smooth soup

Return pot to the heat. Add the lasagna sheets and cook for about 10min until al dente Add the nutritional yeast. No-Chicken, and cook for 5 extra minutes. Finally stir in the cream and mozzarella.

Serve and top with the ricotta, crispy sage leaves and hazelnuts (optional)
