Ingredients
Al Pastor Marinade
4-6 Pounds of Pork Butt
1 Fresh Pineapple or Can of Pineapple
Optional Toping
Finely Chopped White or Yellow Onion
Finely Chopped Cilantro

Avocado Salsa
2 Avocados
2 Large Tomatillos
2 Large Jalapeños
Small Bunch of Cilantro
1 Teaspoon Salt
Juice of half Lime

Al Pastor Marinade Ingredients

4-6 Chiles Guajillo, California, or New Mexico Chile
1-2 Chiles Pasillas
1 Box of Achiote (3.5 oz)
1 Bay Leaf
1 Tablespoon Mexican Oregano
1/2 Tablespoon Cimin
1 Teaspoon Salt
3-4 Garlic Cloves
1/2 Teaspoon Ginger Powder
1/4 Teaspoon Cinnamon
1/4 Teaspoon Clove Powder or 2 Cloves
10 Pepper Corns or 1/2 Teaspoon Black Pepper
3/4 Cup Apple Cider Vinegar or White Vinegar
1 Cup Orange Juice
1 Can Pineapple juice or 3/4 Cup Pineapple Juice
Optional- Juice of chipotle or a Chipotle Pod

Protein Marinade Time Recommendation
Pork, Beef, and Chicken – Minimum 12- 24 Hrs
Seafood- 1 Hr
Tofu- Over Night
*Shrimp cooks easily wit h citrus and vinegar marinade 20-30 Mins

Tips
*If your Chiles are small use the larger quantity recommended
*If you run out of marinade you can add 1 cup of orange juice, 1 Can pineapple Juice, 1/4 Apple cider vinegar to your blend.
*I used marinade all marinade for 6 Pounds of Sliced Pork Butt and 3 Chicken Breast

  3. I use to grill outside during snow blizzard s in Colorado….. love the grill. My husband at the was useless so I had to do all the cooking including the grill but I did not mind really. I was taking care of my family ❤️

  4. Wow people are super uppity when it comes to how another person conducts themselves in their own home. It’s her home, her family, her life. We are merely guests in her kitchen for a limited amount of time and when she says. People need to start being grateful that we have someone who wants to share her recipes and time online, and if this is not what you are looking for then scootch right along…..

    Side note:
    The general public have no idea how the restaurant industry works if they think gloves = safe and sanitary. Besides, when you are getting ready to cook an item you don’t need to wear gloves…because you’re cooking it 🙄. As long as your food handling and cleaning practices at home are on point, you are good. If you have questionable standards/practices then gloves won’t save you from getting ill or making other people sick.

  13. Yeah….great on the grill, much better! Beautiful hunk of pork you got there, even without a butcher. Can't cook with love unless you put your hands into the food and work it, baby! If people have issues with that, then they actually have issues with themselves. This is cooking at its best! Love that Kikkoman T-Shirt.   15. OK Steph, WOW!! What an incredible recipe! I have to admit, after making the marinade and mixing the pork into it, I was really concerned. You mentioned the bitter flavor but I could smell the bitterness. After marinating for over 12 hours, I cooked it like a "GRIZZLY". OH MY!! This is a new family favorite. I can't wait to share it with friends. The avocado salsa, UNBELIEVABLE!!! Muchisimo Gracias
