Bacon beef sirloin tacos
1 1/2 lbs. beef sirloin (stir fry beef), cut into 1 inch pieces
1 can (15 oz.) diced fire roasted tomatoes
12 oz. uncured bacon, smoked applewood
3/4 tsp. salt or to taste
1/2 tsp each of ground cumin, ground oregano, and chile powder
1 medium white onion, chopped
2 -3 cloves of garlic, minced
1 jalapeño, seeded and diced
Garnish:
shredded iceberg or romain lettuce
shredded cheddar cheese
sour cream
avocado cubes
Cook the bacon in a frying pan until it is brown and crispy. Place the bacon onto a paper towel covered plate to drain and cool.
Chop the bacon into bite size pieces and set aside.
Pour out all but about 1 to 2 tbsp. of the bacon grease from the frying pan. Turn your heat to medium high and add the beef sirloin to the pan and sprinkle with the salt.
Cook the beef stirring frequently for 4 or 5 minutes until it is mostly brown. Then add the onion and jalapeño for an additional 2 or 3 minutes or until the onion and jalapeño are soft.
Add the garlic to the pan and cook for 1 minutes stirring well.
Next add the tomatoes, bacon, and spices to the pan. Stir well to combine and then let this simmer for 4 or 5 minutes.
While the meat is simmering, heat up your corn tortillas, one at a time in a dry pan over medium heat. I like to place the hot tortillas in a tortilla warmer which will keep your tortillas warm for 30 to 60 minutes. Perfect for entertaining.
When you are ready to serve this up, all you do is take out a hot tortilla and place a scoop full of the beef/bacon mixture in the middle of your tortilla and top it with a sprinkle of lettuce, a few dollops of sour cream and a few slices or cubes of avocado.
This makes a great taco bar especially when you are entertaining! So delicious! Enjoy this with side dishes of Spanish rice and refried beans.

I would've never thought to have added bacon! Definitely need to try this one, Robin.
I think I shall try this soon. This would be a good option on a taco night.
Oh my gosh! You broke that avocado in half without even cutting it! Ha ha ha. Next time I make tacos, I'm DEFINITELY going to try this, sans the sour cream. Thanks, Robin. BTW, did anyone else notice how, what I think is a towel, moved at the 5:27 edit? Trippy.
I have some venison tenderloin in the freezer, that will become tacos very soon! Thanks for this recipe and video…
Have you made this recipe with chicken?
How about green chili sauce in addition to all the other goodies..cannot wait to try..yummy
I can't begin to tell you how yummy those tacos look!!! Would that filling do well with enchiladas?
This definitely a must try recipe the only item I would add is a ice cold Corona with a lime twist.
That looked great Robin. Now I have to get my hands on one of those tortilla warmers. What a great thing to have!
Mmmmmmm. These have to be some killer tacos! Not a big fan of Oregano (makes no sense to me either) so thought about adding Cilantro instead. Also thinking to top it off with cabbage as it won't wilt and will be extra crunchy. Maybe a squeeze of lime. Saving to favorites and if I make, I will send let you know how my version turns out. Open to suggestions of course and thanks RR!
This looks delicious, Robin. My Mexican psychologist son in law's mother is visiting from Mexico City and this looks perfect to impress her. He's loved everything I've made from your recipes. I'm having her for dinner ( I will be making homemade tortillas) and I think this recipe will work great. You are a life saver lol Thanks so much:o) Toni

Hi Robin, love your recipes! I was wondering what spices you used in the meat sauce? Good spices always make the dish. Thanks.
