Using simple ingredients & a food processor, you’ll get perfect salsa every time in minutes.

Perfect for dunking tortilla chips, tacos, nachos, burritos…you get the idea.

Salsa (salsa roja)

3 medium sized ripe Tomatoes
1+ Jalapeno Pepper
1+ Serrano Pepper
1/2 small White Onion, small dice/chop
1/4 cup chopped Cilantro
2 cloves Garlic, whole
2 Tablespoons fresh lime or lemon juice, or to taste
Kosher Salt

Heat up a frying pan over medium high heat.

When hot, add in whole tomatoes to the dry pan & let them char a bit on the tops, bottoms & some of the sides (no biggie if ya can’t, or if you can wield a brulee torch, even better)

Remove the tomatoes & add in the whole peppers & garlic & lightly char.

Cut up tomatoes into large chunks, removing core. Add to food processor.

Next, cut the peppers into large pieces, toss those in along with the garlic cloves, a good pinch of salt & the lime or lemon juice.

Blend for about 30-45 seconds. Scrape down in between if necessary.

Taste & adjust seasoning if needed.

Remove to a bowl. If salsa is still on the warm side, let it hang out until it’s at least room temperature before adding in the onions & cilantro.

Stir well, taste /adjust if necessary. Enjoy!
