Ingredients:
1 lb. (450g) ground chicken or diced chicken thighs
2 tablespoons olive oil
1 small onion, chopped
3 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon smoked paprika
1 teaspoon ground cumin
½ teaspoon dried oregano
¼ teaspoon cayenne pepper (adjust to taste)
1 cup diced tomatoes (fresh or canned)
2 tablespoons tomato paste
1 cup chicken broth (low-sodium)
Salt and pepper to taste

Instructions:
Sauté aromatics:
Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until soft and fragrant.
Brown the chicken:
Add ground or diced chicken and cook until no longer pink.
Spice it up:
Stir in chili powder, paprika, cumin, oregano, and cayenne. Cook for 1 minute to bloom the spices.
Simmer:
Add tomatoes, tomato paste, and broth. Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes, stirring occasionally.
Finish and serve:
Season with salt and pepper. Ladle into bowls and top with your favorite keto-friendly garnishes.
