Asian Babyback Ribs with Sweet-Chili Roasted Brussels Sprouts

2 Full Racks of Pork Baby Back Ribs
Olive oil
Salt
Pepper

Tin Foil

Sauce:
2 cups cup hoisin sauce
2 tablespoons soy sauce
3 tablespoons sugar
1 tablespoon white wine
2 tablespoon rice wine vinegar
3 cloves garlic minced
3 tablespoons sriracha
3 tablespoons garlic chili sauce
Ginger (to taste)
1 tablespoon sesame seed oil
2 Teaspoons of White pepper

Garnish:
Toasted Sesame seeds
Cilantro
Green onion

1) Preheat oven to 300 degrees.
2) Combine sauce ingredients. Set some sauce aside for later basting.
3) Butcher baby back ribs into a half rack. Massage with tablespoon of olive oil and season with salt and pepper.
4) Baste ribs with sauce liberally on both sides and seal the meat in the foil.
5) Bake in the oven, sealed-side up for 2 ½ hours.
6) After 2 ½ hours, take out and glaze the ribs one more time and set it in the oven for 10-15 minutes at 350 to let the ribs properly caramelize. Be careful not to let the sauce burn.
7) Once done, take out and garnish with cilantro, toasted sesame seeds, green onion.

Sweet Chili Roasted Brussel Sprouts:
1 1/2 – 2 pounds of Brussels Sprouts
1 1/2 Cup Sweet Chili Sauce
2 Tablespoons Soy Sauce
2 Cloves Garlic
Salt
Pepper
Olive Oil

1) Preheat oven to 350.
2) Clean and cut the Brussels sprouts into halves. For the larger ones, you can quarter them.
3) Take sweet chili sauce and combine it with garlic and a drizzle of soy sauce.
4) Place sprouts on baking sheet and drizzle with olive oil and salt and pepper.
5) Roast sprouts in oven at 350 for 20 minutes, turning halfway.
6) After 20 minutes, toss sprouts in sauce and roast in oven for additional 5 minutes.
7) When sprouts are tender but still relatively firm, take out.
8) Serve immediately.
