Steak tacos with avocado yoghurt sauce
Serves 4 Prep: 15 mins Cook Time: 10 mins
1 tsp ground coriander
1 tsp ground cumin
1 tsp ground paprika
1/2 tsp salt
1/4 tsp coarsely ground pepper
1/2 orange, juiced
1 lime, juiced
1 tbs olive oil
2 Coles Australian No Added Hormones Beef Scotch Fillet Steaks
8 Coles Street Tortillas
Avocado yoghurt sauce:
1 avocado, stoned, peeled, halved
1/4 cup (79g) Greek style yoghurt
1 garlic clove, peeled
1 lime, juiced
2 tbs olive oil
1 tbs drained Coles Jalapeño Slices
1/2 cup coriander leaves
2 tbs water, approximately
Salsa:
3 vine-ripened tomatoes, finely chopped
1/2 red onion, finely chopped
1 tbs chopped coriander
1/2 lime, juiced
1. Combine the coriander, cumin, paprika, salt and pepper in a large bowl, Add the
steaks and toss to coat. Add the orange juice, lime juice and oil and toss to combine.
Set aside for 15 mins to develop the flavours.
2. Meanwhile, to make the avocado yoghurt sauce, place the avocado, yoghurt, garlic,
lime juice, oil, chilli and coriander in a blender and blend until smooth. Season. Add
water gradually until you reach your desired consistency. Set aside.
3. To make the salsa, combine the tomato, onion, coriander and lime juice in a small
bowl. Season.
4. Heat a chargrill pan or skillet over medium-high heat. Cook steaks for 3–4 mins each
side for medium-rare or until cooked to your liking. Set aside for 5 mins to rest. Thinly
slice against the grain.
5. Meanwhile, add the tortillas to the pan and cook, turning, until heated through.
6. Divide the tortillas among serving plates. Spread some avocado sauce over each
tortilla. Top with steak and salsa and serve immediately.
