120g Bread Flour • 3g yeast • 2g salt • 96g Water
Mix flour and yeast together, add like warm water and work together minimal kneading just make ingredients homogeneous. Dough is wet and sticky. Sprinkle in salt after it’s been mixing. Cover and rest for 2 hours it will double in size. Roll and press seam to the bottom into loaf shape, can use a moistened tea towel or cover to prevent drying. Second proof 30 minutes (it’s good to heat your oven right now 220°C) reduce to 200°C when baking.
Shape proofed mini loafs and cut with bread scorer blade diagonal slits, then spritz with water. Can bake in a Dutch oven set up with some water or ice cubes or free bake in the oven, turning the heat to grill mode the last 5 minutes to brown the tops.
