  1. Mushroom Dauphinois 🍄 🥔
    Recipe:
    4-6 medium sized potatoes
    10 chestnut mushrooms
    Splash olive oil
    Salt and pepper to taste
    Tablespoon butter
    2 spring onions
    3/4 cloves garlic
    4-5 tablespoons creme fraîche
    300-400ml chicken or veg stock
    1 tablespoon preferred herbs (parsley, oregano…)

    1. Peel and slice your potatoes as thin as possible and set them to the side.
    2. Slice your mushrooms and start them cooking on medium heat in the olive oil with a pinch of salt.
    3. Mince the garlic and chop up the white parts of your spring onions and add them to the mushrooms with the butter and cook off until they are softened.
    4. Stir in the creme fraîche, herbs and stock and cook off for another few minutes taste and adjust salt and pepper.
    5. Mix in the potatoes so that they are all covered in the sauce.
    6. Add to a preheated 200°C oven for 50 minutes until the potatoes are fork tender. Top with the greens of your spring onions.
    Perfectly pairs with any fish or chicken dish 👌
