Pork Belly Banh Mi Sandwich made on the Konnected Joe🔥

Ingredients:
3-4 lb skin off pork belly slab
Scorpion Rub
Umami Boost

1. Smoke at 250° for 4-5hrs until you hit an internal temp of 165-170° or when you have built a nice bark.
2. Wrap in butcher paper and cook until internal temp hits 203° and probe tender.
3. Rest for at least an hour before slicing.

Sandwich Ingredients:
French Bread
Pate
Cucumbers & Onions
Pickled Daikon & Carrots
Jalapeños
Cilantro
Maggi Seasoning

  1. One of the best sandwiches, everything you want in a bite, smokey and rich but with clean fresh veg to cut through it, epic. Smoked a pork belly for bao buns at the weekend, a great cut for the joe, takes on the rub so nicely. Took the skin off and salted and crisped it in a crazy hot oven, bangin

  2. 5h until 170F then wrap with butcher paper then final temperature of? I couldn't hear it due to the paper noise.
