1. Vegan Mustard Mayonnaise

Instructions:
Add soy milk, kasundi mustard, lemon juice, and salt into a blender.
Blend until smooth.
Slowly stream in the mustard oil while blending to emulsify.
Refrigerate to thicken—it’ll set to a mayo-like texture.
Store in a sealed container for up to 2 weeks in the fridge.

Use it as: Sandwich spread, dip, salad dressing, or base for vegan coleslaw.

2. Spicy Avocado Mustard Sauce
Ingredients:
1 ripe avocado
½ medium onion, roughly chopped
Juice of ½ lemon
1–2 small green chilies, chopped
1 clove garlic
Salt to taste
Fresh coriander leaves with stems (about a handful)
⅓ cup mustard oil (cold-pressed)

Instructions:
Scoop out the ripe avocado into a blender.
Add chopped onion, lemon juice, chilies, garlic, coriander, and salt.
Add mustard oil and blend to your preferred texture—smooth or chunky.
Optional: Add a splash of water if you want it thinner.
Store in the fridge for 3–5 days.

Use it as: Topping for tacos, dip for nachos, spread for wraps, or salad dressing.

3. Soya, Mustard & Honey Dressing
Ingredients:
2 tbsp honey
1 tbsp soy sauce
½ tsp roasted kasuri methi (dried fenugreek leaves), crushed
Salt to taste
1 tsp black pepper (or to taste)
½ cup mustard oil (cold-pressed)

Instructions:
In a bowl, mix honey, soy sauce, salt, pepper, and kasuri methi.
Whisk in mustard oil slowly to emulsify.
Store in a bottle in the fridge—it lasts for a couple of months.

Use it as: Salad dressing, marinade for tofu or veggies, drizzle for roasted vegetables, or basting sauce for grills.
