Add 1½ cups of cooked pinto beans (or 1 can, drained and rinsed) and 1 cup of cooked brown rice or quinoa to the skillet. Season with ¼ teaspoon of sea salt and ¼ teaspoon of black pepper. Stir to combine and cook for 2 to 3 more minutes until heated through. Remove from heat and let the mixture cool slightly.

Lay out 6 large whole wheat tortillas. Spread a spoonful of the warm bean mixture in the center of each tortilla. Top each with ¼ cup of shredded sharp cheddar cheese and, if using, about 2 to 3 tablespoons of plain Greek yogurt for extra creaminess. Fold in the sides of each tortilla and roll them up tightly into burritos.

To freeze, wrap each burrito individually in foil or parchment paper, then place them in a freezer-safe bag or container. To reheat, unwrap and microwave on high for 2 to 3 minutes, or bake in the oven at 375°F (190°C) for about 20 minutes until heated through. Garnish with chopped fresh cilantro if desired.
