Tom Yam Goong 🥣 My go-to when I’m feeling meh!

Was feeling a bit under the weather, so I made this comforting bowl of Thai goodness. Light, tangy, spicy, and so soothing—exactly what I needed.

🧄 Ingredients (Serves 1):
• 3 thin slices galangal (or ginger if you can’t find it)
• 3 slices lemongrass
• 1 shallot, quartered
• 2–3 small red chillies, crushed (adjust to your spice level)
• 1 kaffir lime leaf, torn
• 2 straw mushrooms, quartered
• ½ tomato or a few cherry tomatoes
• 1 cup water
• 3 prawns, peeled and deveined (keep the shells for stock!)
• 1 tbsp fish sauce
• Juice of 1 lime
• Coriander leaves to taste
• 1 tsp Thai chilli jam (optional)

👩‍🍳 How to make it:
1. Bring water to a boil in a small saucepan.
2. Add prawn shells to make a light stock. Simmer for a few minutes, then remove the shells.
3. Add galangal, lemongrass, shallots, garlic, red chillies, kaffir lime leaf, mushrooms, tomato, fish sauce, and chilli jam. Simmer for about a minute.
4. Add the prawns and cook until they’re just pink.
5. Stir in lime juice and coriander leaves.
6. Serve hot and enjoy the cosy, spicy comfort 🥰

🌶️ Full of flavour, easy to tweak, and super healing when you’re not quite 100%.
