How to Smoke Pot Roast for Sunday Dinner

Smoked pot roast is perfect for Sunday dinners…or any night, actually. Season the chuck roast with a basic salt/pepper/garlic rub and put on the grill with oak smoke at 225 degrees over indirect heat.

Smoke for a few hours and then put roast in a Dutch oven with beef stock, carrots, potatoes, onions, rosemary, thyme, and some seasonings. Put back on grill with indirect heat now at 275-300 degrees for a few hours until meat reaches at least 203 degrees. Shred beef and put back in Dutch oven with other ingredients. Sooooo good!
