Asian ‘Burrito’ | Som Tum Salad, Fast Chicken Marinade, + Spring Roll Wrapper

In today’s video, I’m making an Asian ‘Burrito’ using spring roll wrappers a quick chicken marinade and a som tum salad where I use green cabbage instead of more traditional green papaya. The result: Loads of flavor.

~ Recipe ~

█ Asian Burrito █

• Asian chicken marinade (recipe below)
• Tom Sum Inspired Salad (recipe below)
• Lots of cilantro (optional)
• 1 Rice wrapper

Wet the rice wrapper until pliable and rollable. Set all ingredients and roll. Enjoy!

█ Asian Style Chicken Marinade (2 servings) █

• 1 Chicken breast diced
• 2 cloves garlic, minced
• 1 TBSP fresh ginger, minced
• 2 TBSP soy sauce
• ½ TBSP Rice Vinegar
• 1 TSP Sugar

Mix all ingredients in a bowl and plastic bag.

Saute for 10 minutes in a cast iron over medium high heat

█ Som Tum Inspired Salad (3 servings) █

• 2 Cloves garlic
• 1 TSP Sugar
• 1 TSP Salt
• 5 Chiles
• 2 TBSP Roasted Peanuts
• Cilantro (optional)
• ⅓ Lime (peel & juice)
• 1 cup cabbage, thinly sliced
• 10 cherry tomatoes, quartered
• 1 TBSP Fish Sauce

Roughly crush garlic, sugar, and salt in a mortar and pestle. Add chiles and crush (note: the more your break apart the chiles, the spicier the salad).

Add peanuts, ⅓ lime, and cilantro and roughly crush.

Transfer crushed dressing mixture to a bowl with cabbage and tomatoes. Add in fish sauce to taste. Stir/lightly crush to combine.
