Instant Pot Low-Carb Taco Soup | Using Frozen Beef!

Delicious, spicy and warm low-carb taco soup! Make-ahead and meal prep this for the week for a quick lunch or dinner.

Nutrition (per about 1 cup):
Energy – 177 Cal
Fat – 14.2 g
Carbs – 4 g
Fibre – 0.8 g
Protein – 9.2 g

Low-Carb Taco Soup (~21 cups per recipe):
– 2 lb ground Beef
– 1 Red onion, chopped
– 1 medium Orange Bell Pepper, diced
– 2-3 Jalapeno peppers, chopped
– 2 stalks of Celery, diced
– 1/2 lb of Cremini mushrooms, sliced
– 2 cups Kale, chopped
– 2 cups Chicken broth (can substitute beef or vegetable broth)
– 2-14 fl oz cans of Diced tomatoes
– 2 Tbsp of Taco Seasoning (See recipe below)
– 8 oz. Cream cheese
– 1/2 cup fresh Cilantro, chopped
– 2 Green onions, chopped
– Salt & Black pepper to taste

Instruction:
1. Turn the Instant Pot on to Sauté to start warming the pot.
2. Add the ground beef and all other ingredients except the cilantro and green onions.
3. Mix slightly before closing the Instant Pot.
4. Close the Instant Pot, cook under high pressure for 10 minutes. Quick release after 5-10 minutes.
NOTE: This is the time required to cook the beef from frozen. Adjust cooking times as necessary if using fresh ground beef.
5. Check the temperature of the beef to ensure it has reached the minimum internal temperature of 165°F. Break apart the beef into bite-size pieces.
6. Turn the Instant Pot on to Sauté again then add the cream cheese. Stir occasionally until the cream cheese is melted.
7. Add fresh cilantro and green onions to finish the soup.
8. Top with shredded cheddar, avocado and pickled jalapenos (optional).

Homemade Taco Seasoning:
– 2 Tbsp Chili Powder
– 2 tsp Cumin
– 1 1/2 tsp Garlic Powder
– 1 1/2 tsp Sea Salt
– 1 tsp Paprika
– 1/2 tsp Onion Powder
– 1/2 tsp Oregano
– 1/2 tsp Parsley
– 1/4 tsp Red Pepper Flakes
– 1/4 tsp Cayenne Pepper
