🍴 Ingredients
For the Ribs:
• 1 rack of pork ribs (baby back or spare ribs)
• 2 tbsp olive oil
Dry Rub:
• 1 tbsp brown sugar
• 1 tbsp paprika
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp onion powder
BBQ Sauce:
• 1 cup barbecue sauce
• 2 tbsp honey or brown sugar
• 1 tbsp apple cider vinegar
For the Roasted Vegetables & Boiled-Baked Baby Potatoes:
• 1 lb (450g) baby potatoes
• 1 zucchini
• 1 bell pepper
• 1 red onion
• 1 cup cherry tomatoes
• 3 tbsp olive oil
• ½ tsp salt
• ½ tsp black pepper
• ½ tsp Italian seasoning
• 1 tbsp balsamic vinegar or lemon juice (for extra flavor)
👨🍳 Instructions
Step 1: Prep the Ribs
1. Remove the membrane from the back of the ribs (use a knife to lift a corner, then grab with a paper towel and pull).
2. Pat dry and coat with olive oil (optional).
3. Mix the dry rub ingredients and rub generously onto both sides of the ribs.
4. Let the ribs rest for 30 minutes (or overnight for deeper flavor).
Step 2: Bake the Ribs
1. Preheat oven to 275°F (135°C).
2. Wrap the ribs tightly in foil and place on a baking sheet.
3. Bake for 2.5 to 3 hours until they are tender and juicy.
4. Remove from oven, unwrap, and increase the oven temp to 450°F (230°C).
5. Brush the ribs generously with BBQ sauce.
6. Return to the oven for 5-10 minutes (or broil for 3-5 minutes) until the sauce caramelizes.
Step 3: Boil the Baby Potatoes
1. While the ribs are baking, bring a pot of salted water to a boil.
2. Add baby potatoes and boil for 10-12 minutes until just fork-tender (not too soft).
3. Drain and set aside.
Step 4: Roast the Vegetables & Boiled Potatoes
1. In a large bowl, toss the boiled baby potatoes, zucchini, bell pepper, red onion, and cherry tomatoes with olive oil, salt, black pepper, and Italian seasoning.
2. Spread them in a single layer on a baking sheet.
3. After removing the ribs, place the vegetables and potatoes in the oven at 450°F (230°C).
4. Roast for 15-20 minutes, flipping halfway, until the edges are crispy and slightly charred.
5. Drizzle with balsamic vinegar or lemon juice before serving.
Step 5: Serve & Enjoy!
• Let the ribs rest for 10 minutes, then slice.
• Serve with the roasted vegetables and baby potatoes, plus extra BBQ sauce on the side.
