Ingredients
PICKLED JALAPENOS
– 1lb jalapeños, thinly sliced
– 1 cup white vinegar
– 1 cup water
– 1/4 cup sugar
– 4 cloves garlic

PICO
– 6 roma tomatoes, diced
– 1 white onion, diced
– 3 jalapeños, diced
– 1/4 cup cilantro, chopped
– 3 limes
– salt and pepper to taste

GUAC
– 3 avocados
– 1 chipotle pepper in adobo sauce
– scoop of fresh pico
– salt and pepper to taste

BEEF & BEAN
– 1lb ground beef
– 1 tbsp chili powder
– 1 1/2 tsp cumin
– 1 tsp smoked paprika
– 1/4 tsp garlic powder
– 1/4 tsp onion powder
– 1/4 tsp dried oregano
– 1/4 tsp red pepper flakes
– salt and pepper to taste
– 16oz refried beans

NACHO CHEESE SAUCE
– 1/4 cup unsalted butter
– 1/4 cup AP flour
– 2 cups whole milks
– 2 cups (8oz) cheddar cheese, shredded
– 2 tbsp hot sauce
– 1 tsp cayenne pepper
– salt and pepper to taste

CHIPS
– corn tortillas
– vegetable oil
– salt
– lime juice

  1. I make a lot of pickled jalapeños in the summer. So good. I sometimes will use apple cider vinegar in place of white vinegar.

    I pretty much make quac the same way you do.
