-REMOVE SKIN AND SCORE FAT CAP
-APPLY ASIAN STYLE BBQ RUB AND PLACE IN SMOKER AT 275F FOR 3-4 HOURS UNTIL INTERNAL TEMP HITS AT LEAST 165F
-LET REST FOR 20 MINUTES AND SLICE TO DESIRED THICKNESS

CARROT AND DAIKON SALAD
-JULIENNE EQUAL AMOUNTS CARROTS AND DAIKON
-PLACE VEG IN A STRAINER AND SALT GENEROUSLY LETTING SIT FOR 15-20 MINUTES BEFORE RINSING AND PLACING IN A JAR WITH DESIRED PICKLING SPICES
-BRING EQUAL PARTS RICE WINE VINEGAR AND WATER (1/2 CUP EACH) AND 1/4 CUP SUGAR JUST TO A BOIL, REMOVE FROM THE HEAT AND POUR OVER CARROTS AND DAIKON
-LET COOL BEFORE PUTTING CAP ON AND PLACING IN THE FRIDGE
