10 Easy Chicken Snacks- Ramadan Snacks – Make ahead Chicken Filling- Easy Chicken Snacks

Make 10 easy chicken snacks using the same chicken filling. The chicken filling can be made ahead of time and stored in the fridge or freezer for 2 weeks. Use the chicken filling to make many snacks.

Recipes:
**Chicken Filling**
Chicken Breasts, diced- 3
Chili powder- 1 to 2 tsp
Turmeric powder- 1/4 tsp
Coriander powder- 2 tsp
Garam Masala- 1 tsp
Salt- 1 tsp
Oil- 2 tbsp
Onion, chopped- 4
Ginger, grated- 2-inch slice or 1 tbsp
Garlic, grated- 2 large cloves or 1 tbsp
Green chilies, chopped- 2 or 3
Curry leaves- 1 sprig
Garam masala- 1/2 tsp
Salt- 1 1/2 tsp
Cilantro, chopped- 1/4 cup
**Preparation
Combine the chicken with all the spices and cook covered. Shred the cooked chicken.
In a pan, cook onions along with ginger, garlic, green chilies, curry leaves till chicken turns golden brown. Add shredded chicken, cook for a few minutes and add cilantro.
Chicken filling can be made ahead of time and stored in fridge or freezer.

1- Chicken Cutlets
*For Making 10 cutlets*
Chicken filling- 1 1/2 cups
Potatoes, cooked and mashed- 3
Salt- to taste
Eggs, beaten- 2
Breadcrumbs
Oil for pan or deep frying
To the chicken filling, add cooked mashed potatoes. Combine well.
Make medium-sized balls, flatten them.
Coat in beaten egg and then in breadcrumbs.
Pan fry or deep fry in oil.

2- Chicken Puffs
Pre-heat oven to 400 F or 200 C.
Place 1 to 2 tbsp chicken filling on the puff pastry sheet.
Fold the sheet.
Glue the edges.
Brush with beaten egg.
Bake for 20 minutes till crispy & golden in color.

3.Chicken Samosa
*For Making 8 Samosas*
All-purpose flour- 1 cup
Salt- 1/2 tsp
Oil- 1 tbsp
Water- close to 1/2 cup, to make soft dough
Egg, beaten- 1 or 2

Make flour glue: combine 1 tbsp flour and 2 tsp water to make a paste.
Combine flour, salt; add water little by little to make a smooth and soft dough.
Knead well.
Add 1 tbsp oil and let rest for 5 minutes.
Divide dough into 4 equal balls.
Roll each dough ball into a thin round shape, dust flour while rolling.
Warm the rolled dough on a pan, do not overcook it.
Half the cooked flattened dough.
Make a cone shape out of one of the halves.
Glue the edges using the flour glue.
Brush with beaten egg.
Deep fry in oil.

4-Chicken Pakoras
Chicken Filling- 1 cup
Gram flour- 1/2 cup
Salt- if required
Water- just enough to bind the mixture
Combine chicken filling and gram flour.
Add some water just to bind the mixture.
Make into balls.
Deep fry or pan fry in oil.

5- Chicken Quesadillas
Tortilla or Chapati
Cheese
Spread of your choice, I used Chipotle mayo
Smear tortilla with the spread.
Top with chicken filling.
Add cheese over the chicken filling.
Fold the tortilla.
Cook on a pan over stove top till both sides turn crispy and golden.
Half the quesadilla and enjoy.

6- Chicken Spring Rolls
For Making 8 Rolls
All purpose flour- 1 cup
Water- close to 1 cup, to make smooth batter
Salt- 1/2 tsp
Egg, beaten- 1 or 2
Breadcrumbs

In a blender, grind flour, salt and water and make a smooth flowing batter.
Add water accordingly to make a smooth batter.
Place a pan over medium heat.
Grease pan with oil.
Pour 1 spoonful batter and cook for 2 minutes.
Do not over cook.
Place 2 tbsp chicken filling on one of the ends of the crepe.
Fold the crepe.
Use the batter to glue the edges.
Dip in beaten egg and then in breadcrumbs.
Pan fry or deep fry in oil till golden brown.

7- Chicken Bread Pizza
Bread slices
Pizza sauce- 2 tbsp/slice
Italian seasoning or dried oregano- 1 tsp/slice
Chicken filling- 2 tbsp/slice
Cheese
Pickled Jalapeno

Smear the bread with pizza sauce.
Top with chicken filling.
Add Italian seasoning or dried oregano.
Top with cheese and Jalapeño.
Place the bread on a pan placed over low heat.
Cover the pan.
Cook till the bread has toasted well and cheese melted.

8- Chicken Rice cake
For making 6 Cakes
Chicken filling- 1 cup
Rice Flour- 1/2 cup
Water- 1/4 cup

In a bowl, combine chicken filling, rice flour and water, make into a smooth dough.
Make thin patties.
Pan fry in ghee.

9- Chicken Omelette
Egg, beaten- 1
Chicken filling- 2 tbsp
Semolina or Rava- 2 tbsp
Ground black pepper- 2 pinches

In a bowl combine egg, semolina, chicken filling and black pepper.
Place a pan over medium heat, grease with 1 tsp ghee.
Pour the egg batter.
Cook till bottom side turn golden.
Flip over and cook the other side.

10- Chicken Momos
For Making 8 Momos
All-purpose flour- 1 cup
Salt- 1/2 tsp
Water- close to 1/2 cup, to make smooth & soft dough
Oil- 1 tbsp

In a bowl, combine flour, salt; add water little by little and make a smooth & soft dough.
Knead well.
Add oil, combine well and keep aside the dough for 5 minutes.
Divide the dough into 8 small balls.
Roll each ball into thin rounds.
Place 1 tbsp chicken filling on the centre of the round pastry.
Make pleats on the edges.
Place them in a steamer basket.
Pour 1 cup water to a large saucepan. Place the steamer basket into the pan.
Steam cook for 10 minutes.
