How to Make Low Carb Tacos

Low Carb Tacos ~ Cheddar cheese shells filled with spicy ground beef and topped with lettuce, tomato and picante sauce.

Ingredient List:

1 pkg taco seasoning mix or homemade recipe
1 med onion chopped
1 lb ground beef
3/4 cup water
Sharp cheddar cheese- finely shredded variety
Lettuce shredded
Tomato
Hot sauce

Brown the ground beef and onions and drain the fat as shown in the video. Add the taco seasoning mix and 3/4 cup water. Simmer until liquids are absorbed. Spread the cheese thinly onto parchment paper in a 4-6 inch circle. Microwave for 1 minute or longer depending on how crisp you want the shells. Pat off excess oil with a paper towel. Shape into taco shells while still warm and pliable. Stuff the shells with the taco meat, lettuce, tomato, and favorite toppings. Enjoy! This is my favorite low carb recipe!

  3. I love this idea and tried it with Sharp Cheddar… However, I find it to be a lil on the salty side. Next time I will try a low sodium cheese or no salt in the taco meat.
