Barbacoa Taco Recipe: (We made a large party sized potion in this video but you can cut the recipe in half for a smaller crowd).
Ingredients:
– 6 pounds of Chuck Roast
– 1 tablespoon of Avocado Oil (or other high temp oil) for searing the meat
– 20 oz of Beef broth/stock
– 1/4 cup Apple Cider Vinegar
– Juice from 1 freshly squeezed Lime
– 1 large or 2 medium sliced Onion(s)
– 3-4 tablespoons of chopped or minced Garlic
– 2 tablespoons of Mexican Oregano (or regular Oregano)
– 4 teaspoons of cumin
– 1 Bay Leaf
– 1 tablespoon each of salt and pepper (or to taste)
– 1 sliced Jalapeno
– 2 oz of El Yucateco Chipotle Hot Sauce
– Corn Tortillas
– Your favorite toppings for Tacos
Directions:
Always begin by washing your hands prior to preparing any food recipe. Cut the chuck roast into blocks (2 inch squares approximately). Pre-heat a frying pan with oil to high heat. Sear chuck roast on all sides, then add to the slow cooker. Deglaze the frying pan with a small amount of beef broth, add that to the slow cooker. Add beef broth, apple cider vinegar, lime juice, onion, garlic, oregano, cumin, bay leaf, salt/pepper, jalapeno, and El Yucateco Chipotle Sauce to slow cooker, mix well, cover and cook on low for 4-6 hours or until fork shred tender, be sure to stir occasionally. Remove bay leaf, shred beef and remove any unwanted fats at this time. Stir well and place slow cooker on warm setting for at least one hour to allow flavors to absorb into the shredded beef. Warm corn tortillas, build your tacos with all of your favorite toppings and ENJOY! Don’t forget to add your favorite El Yucateco Hot Sauce as a topping too!

Just a heads up those tacos should be made with cheek meat and other meat's takin from the head of the cow . But to each his own and salsa brother salsa

I use a can of chipotle peppers in adobo sauce, but this is a great idea!!
