I love making this warm, delicious, sour and savory soup when it starts to get cold. This an easy recipe with all the flavors coming together in one large pot.

Recipe Below:

2 pounds pork baby back ribs (washed and each rib separated).
3 roma tomatoes, quartered
10 long green beans (cut into about 2″ pieces)
1 small radish (cut into 1/4″ pieces)
6 small taro (peeled)
2 jalapeno peppers
1 bunch water spinach (or 2 large handfuls of regular spinach).
singing mix (around 3 tbsp, but add to taste).

1. Prepare the ribs and add them to a large pot. Add enough water to just cover the ribs.
2. Bring to a boil, then cook at medium heat for about 15 minutes. Remove the scum that floats on the top.
3. Add the tomatoes and cook for an additional 30 minutes.
4. Add the taro and radish and cook for another 15 minutes, until taro is soft.
5. Add peppers, green beans and singing mix to taste. Cook for another 10 minutes.
6. Turn off the heat and add the spinach. Cover until ready to serve.

Serve with white rice & fish sauce (optional) and enjoy!
