BETH’S VEGGIE QUESADILLA
Makes 2 Quesadillas and 1 cup guacamole

INGREDIENTS:
1 tbsp (15 ml) olive oil
5 half moon slices of Red Onion
2 large mushrooms, sliced
½ cup of baby spinach
salt and pepper to taste
¾ cup (180 ml) of shredded Monterey jack cheese
4 flour tortillas, if you can get the uncooked variety like Tortillaland, even better!

For Guacamole
2 Avocados, diced
1 small tomato, diced
1 tbsp (15 ml) red onion, diced
juice of 1 lime
salt and pepper to taste
few dashes of your favorite hot sauce
1 tbsp (15 ml) chopped cilantro

METHOD:
Heat olive oil in a large skillet. Sautee red onion until soft and tender, then add mushrooms and cook until they are tender, add spinach and cook until wilted. Season with salt and pepper to taste and set aside.

Prepare guacamole. In a small bowl combine the avocados, tomatoes, red onion, lime juice, salt and pepper, hot sauce and cilantro. Stir gently to combine and transfer to a small bowl.

Heat tortillas on a griddle (cook them first if using the uncooked variety) add cheese to 1 tortilla, place veggies on top, top with remaining cheese. Heat until cheese has melted, flipping mid way through.

Cut into wedges and serve with the guacamole!

  7. Actually, to be called quesadilla it would have to be a folded tortilla, if you put one on top of the other then its called a sincronizada (or at least thats what my mother called them). A true quesadilla is a folded tortilla with any filling. But it sounds delicious anyway 🙂
